The icing is very tricky - I have made it a number of times, and once in a while I've had it dry out sooner than I would like because of the sugar alcohol in the sweetener. I want to make the pinwheel ones, but I really don't want to buy ANOTHER flour/powder... is there a way I can substitute the whey protein and the gluco... thing? :)
Hi Nancy! I'll do my best to give you substitutions. Let's start with the easy one: Although I truly prefer glucomannan for baking and sauces, you can substitute with xanthan gum. Substitute the whey protein with additional coconut flour - but slightly less - for the original 1/4 cup (4 tablespoons whey powder) use 3 tablespoons of coconut flour. As you know, coconut flour is quite absorbent - that is why it is not a straight 1 to 1 substitution. Also, if your dough seems a little bit dry, add a teaspoon of water at a time, knead it in, until you get a nice soft but firm dough. One last suggestion, and for many of my future recipes, I am using lupin flour, which can be substituted 1 to 1 for the whey protein isolate. Have fun baking! Cheers!

I have ordered glucomannan on amazon and still waiting. Could you advise if I can use only coconut butter and coconut flower, instead of regular butter and almond flour?
I hope that you do get the glucomannan - it has improved the texture and overall quality of the recipe, especially in keto baked goods. In my opinion, much better than other products I've tried. Let me know how it goes. Cheers!
