If you guys want to step up ur chicken game. Use moroccan “ras el hanout” its a mix of spices. You just need one powder and i have not been using any other spices since i have discovered it its SO GOOD

How you gonna cook a whole meal in a recipient with foil at the bottom? That sounds impossible. Not to mention you'd be eating metal.

In Dominican Republic this is called “Locrio” 😊. It can be made with chicken, porkchop, ham , sardines whatever you have at hand , same concept!. Your version looks yummy!

I'm not a cook, but my mom makes Mediterranean food, & she bakes her chicken with yogurt (preferably Greek). She says you need an acid (the lemon juice) & a fat (yogurt) to tenderize meat. You could add more oil too, but yogurt makes it creamy.
Needs more cooking in my opinion. Leg meat takes longer to cook to a pleasant enough texture for me to eat as it should get to the tender point with longer cooking in my opinion. You could also add lemon juice in the marinade will give extra tenderising.
Make sure it is room temp or slightly cool before you cook it, if it's straight from the fridge it may seize up when you add it to the pan, making it chewy
Putting the chicken on the lid to save on dishwashing. This is the true one pot meal!

I make chicken & rice pilaf like this every week, except I put mine in the oven. It's my son's favorite. Mine too - easy to cook, easy to clean
