Surprisingly Darth Vader would be the only Bad match up for 2003 Grievous. Grievous had on weakness which was force attacks. However he was so fast that once he closed the distance it was close to impossible for jedi to use the force without their defense breaking and getting chopped in half. He had fought Mace Windu to a draw and Kenobi was choosen over Yoda because Kenobi being a master of defense had a better chance of winning against Grievous. And Obiwan Kenobi nearly died in his confrontation. So this shows just how deadly Grievous is and that he was without a doubt the deadlist lightsaber combatant the Galaxy has seen. However Darth Vader not only uses a defensive style but also has some of the most heavy hitting lightstaber swings out of everyone. But most importantly. Vader was the strongest force User in the Universe. And that is one thing he demonstrated constantly. He would constantly force grab or choke opponent while engaged in lightsaber combat. This would normally get every other force user killed as it lowers their guard with the lightsaber. Especially against Grievous. But Vader would be the only person that would be able to stop Grievous vicious assault while still having enough power to spare to force choke him and crush his chest, without Grievous breaking his stance. This would in fact be pretty onesided. Because the formula of success that made Grievous such a fiercesome opponent simply would not even remotely work. Be it from afar or close lightsaber combat: Vader would always come out on top.
Strength: Vader. He can physically lift a 10 ton tank with one arm. That suit he’s wearing isn’t just for show. Speed/agility: Grievous. The guy can outrun the FORCE. Durability: Vader. Even in the movies he’s shown to withstand glancing blows from a lightsaber. IQ/BIQ: Grievous would actually take these. While Anakin did serve as a general for the GAR and later as the emperor’s enforcer, he has access to the force and limited precognition. Grievous commanded BATTLE DROIDS with enough efficacy to kill JEDI and was the sole military commander of the entire CIS. Hes brutal, unpredictable, skilled, efficient, and massively more powerfull than any similarly sized entity could ever hope to be without mechanical or force enabled enhancements. Even allowing Vader to use limited force abilities to strengthen him and boost his agility and speed, he loses (imo). With full access to the force however, few can match Vader. I think Greivous would put up a great fight, far better than anyone had given Vader before, but Vader's overwhelming proficiency with the the force would eventually earn him the dub. Love both these characters, I really truly wish they had been able to interact (and for it to be good grievous, not that sniveling coward)

Actually its much more simple than that and dooku explained it himself, as he said “If you are to succeed in combat against the best of the Jedi, you must have fear, surprise, and intimidation on your side. But if any one element is lacking, it would be best for you to retreat”. Dooku said that to grievous basically because he can’t use the force and thats his greatest disadvantage against a jedi. When grievous fought obi wan he had no surprise factor, obi wan wasn’t intimidated nor afraid so grievous was literally fighting obi wan with no advantages because of his pride, then when obi wan actually used the force grievous realized that facing obi wan in those terms was a mistake and he tried to escape but by the time was to late, obi wan had already disarm him and grievous had no choice but to fight. Obi wan didn’t win because of the force, he won because he was smart and because of grievous’s pride. Grievous was naive enough to think obi wan would come alone to face him so he decided to engage 1v1 then he realized he fell on kenobi’s trap and was game over for him

Not forgetting they are also great duelists.
