Pay attention to the fact that when Wolfgang cooks, there aren't a lot of ingredients in the dishes! It's quality ingredients prepared properly, with care. Yes he dresses up the plates with garnish and flowers, but the food is always simple, done right and spot on.
Austrian cuisine is just not fancy man... Schitzel is 4 things, Leberkässemmel is super bland and Krapfen is also not very fancy.... Dude I cannot overstate how simple the overall Austrian cuisine is compared to Vietnamines, Mexican or even Italian cuisine.... xD

He talks with so much warmth and passion and even though I’ve never eaten at Spago, I’m guessing that these same things translate to his food. Love him as a chef and as a person! In Los Angeles, you can essentially wear anything to dinner. I ate at Spago last month and at the table next to us was a woman who brought a doll that looked just like her to the table and sat it front and center. Same purple hair color and clothes. In fact, the crazier you dress, the more people assume you are an eccentric billionaire.
This is the ultimate cooking. Different from those complicated fine dining. It’s simple but warm with heart and bring the flavour to the basis. I m really good at cooking. I feel it!!
When I lived in LA I was fortunate to dine at Spago BH regularly and it never disappointed. Always a great scene, amazing cooking and wonderful hospitality. Wolfgang was always there, cooking, chatting with guests and just being a great host. It was so wonderful.. I sill never forget those days and will likely never encounter a restaurant that I love more. Thank you Chef !!

i have never seen a recipe of kaiserschmarrn with sauerrahm (creme fraiche) and formage blanc. Gotta try that one. As an Austrian myself I am really loving Pucks innovations and stories. Gotta look out for his books

I think prior to Spago, NYC fine dining was traditional, like classic French, very Euro-centric which was sophisticated but not very playful or adventurous. LA/California has always had a more laid back and creative attitude toward dining not being as stuffy and traditional. i.e. deconstructed dishes/desserts
Wolfgang keeps stressing innovation at his restaurants to attract new customers. But he has to realize it's his classic iconic dishes that keep the old customers coming back, the return customers make up the bread and butter of his business. He knows never to tamper with his Oscar Salmon Pizza, Chicken Pot Pie, Kobe Beef Sliders........Oh I'm drooling just writing about this. Notice it's always the "comfort food" dishes that leave the biggest impression. People want dishes that remind them of their childhood, that's why the comfort dishes remain popular.
Any host that calls themselves a "Food Sage" shouldn't be taken seriously. If anyone knows Wolfgang, he highly values customers that enter their restaurant in a dress code appropriate to fine dining and this wasn't it. The host kept using buzz words to describe the food but I honestly could have done without it and had Wolfgang himself talk about his own food, not Reach Guinto. Please, revise this video format.
