Just a quick response to those of you advocating leaving all the fat in. I totally get where you're coming from, and I didn't remove all the fat. But I used very fatty ground chuck, which was probably something like 70/30, and there was a TON of fat, and I felt that it would've been an oil slick if I hadn't taken some of it out. I mean there was a pantload of fat. I left plenty in, because I agree with you, fat is where the flavor is!

With traditional Rochester meat hot sauce, you don’t skim the fat off. That’s where a lot of the flavor is.

Mark's make a great plate, especially late night after a few beverages! And I personally love to get plenty of hot sauce on the mac salad.
