Rochester Hot Meat Sauce

- Making the famous Rochester Hot Meat Sauce today, it will be served on the equally famous "Garbage Plate". I saw this on an episode of Man vs. Food and just had to make it. This was a very hectic video to make because I was shooting a video of how to shoot a video. So many things going on!
Ingredients:
Ground beef 1 Pound
Olive oil 1 Tablespoon
Onion 1/2 , finely chopped
Garlic 1 , chopped
Brown sugar 1 Tablespoon
Freshly ground black pepper 1 Teaspoon
Cayenne pepper 1 Teaspoon
Chili powder 1 Teaspoon
Cumin powder 1/2 Teaspoon
Allspice powder 1/4 Teaspoon
Cinnamon powder 1/4 Teaspoon
Ground cloves 1/4 Teaspoon
Tomato paste 6 Ounce
Water 2 Cups
Directions
1. Saute onion and garlic in olive oil in a pot.
2. Add ground beef and then pour water on top.
3. Drop in brown sugar, chili powder, cumin, ground cloves, allspice powder, cayenne pepper and cinnamon powder to the pot. Mix well.
4. Throw in tomato paste, turn the flame down to medium and continue to cook.
5. Add more water and mix everything well. Simmer the sauce for about an hour with the top on.
6. Season with salt, taste and adjust for the seasonings.
SERVING
7. Serve with baked beans and potatoes, hot dogs. Enjoy. #inkidreferralcode tomstestkitchen
Soooooooo glad I found this video. I'm from the UK and worked at The Old Toad on Alexander St back in the 90s. Nick Tahou's and Marks Texas Hots were our favourite eateries after work. I can now enjoy garbage/sloppy plate sauce anywhere in the world. THANK YOU!!!

Not sure if you tried this already but they also make with cheeseburgers and mac salad. Nothing better than a garbage plate. Now I am going to attempt my own meat sauce. Thanks for sharing!!
Lived Upstate my whole life sauce is AWSOME. I agree with everyone else your missing the mack salad & that plate was half empty. After eating this you should feel like you just finished Thanksgiving in the summer 😂😅 Adding a milk shake and hands down you've been transported to the fingerlakes region of NY ❣ Nice ❣
Definitely need a Mac salad and fresh minced onions on top. Also is served with a hunk of bread. For a twist, you can also add a few tablespoons of Worcestershire sauce to the meat sauce.
+Truth Quester Yea, there are lots of variations. This was the original recipe and ingredients as used back in the depression era. My wife did have it with a hunk of bread, she likes bread
I miss this stuff soooooo much. I always buy the bill greys bottle when im in town, you add your own meat, but its not the same....
Living in northern Kentucky, but absolutely love Rochester , NY and upstate New York. I love New York. I love Cincinnati chili and Rochester sauce better than Buffalo sauce even though I love Buffalo and upstate New York and its culture and people.
I get my garbage plates with cheeseburgers, Mac salad and home fries. Onion, mustard, ketchup on top.

Great recipe Tom. Lived my entire life in Rochester and IMO it could compete with many of the restaurants around town. I’ve made it a few times and it’s always a group favorite. The fun part about a plate is you can make it anyway you want! Burger, dog, chicken fingers, grilled cheese, sausage, pulled pork, Mac and cheese, Mac salad, beans, fries, potatoes, tater tots. The options are endless!

Rochester, NY is an envy to me. Love Cincy Chili, but know that Rochester sauce is better than Buffalo sauce.

I agree with everything except the tomato paste. The majority of the places in Rochester that make the hotsauce don't add tomato to it. It's what makes it a hotsauce and not a chili.
My fellow Rochesterians may hate me for saying this, but I hate the meat hot sauce with cinnamon in it. My favourite plate actually comes from Charlie Riedel's. To me, their meat hot sauce tastes the best and their mac salad is creamy, not dry, so it marries perfectly with their meat sauce.
I recently ordered three meat sauces, from Rochester. They are Don's Original, Momma K's and Steve T. The Steve T. is supposed to be the "original" meat sauce. They all look interesting and I can't wait to give them a try.

In Rochester, we just call them plates. A standard plate comes with mac and homefries and everything on it which includes diced onion and mustard (plus meat hot sauce obviously). They usually fry the homefries though and it's usually topped with cheeseburgers although there are many variations, one of my favorites is shaved steak and cheese

Less cumin, 1/4 tsp, and only 1-2 Tbs of tomato paste. It’s not chili.
Most people in the ROC prefer mac salad instead of beans(beans are the original at Nick Tahou’s, they’re also served cold🤮). Once you’ve had mac salad with meat hot sauce you’ll never want it another way.
instead of water I would do beef broth.
From the Rochester area and although baked beans are an option the popular choice is mac salad. Also you can have two cheeseburges instead of the hotdogs...many of hots restaurants around the area have their own reditions of the plate calling them trash or rubbish plates with many meat options like Italian sausage or a Philly cheese steak. I made this today. Will assemble a garbage plate in a few days. Gonna use mac and cheese, tater tots, then a cheeseburger topped with the sauce and some green onions.

Growing up I worked at Schaller"s and Prof's Place back in the late 80's. The original recipe was anything that was left over went into a big pot that sat on the back corner of the grill. Burgers,Buns,Cheese,HotDogs, frenchfries. Made it spicy with tobasco sauce. But this looks like a good recipe. Yeah that's not really a plate, well it is it's Tom's rendition of a plate but not a true plate

Great video Tom, the Rochester Hot Meat Sauce looks and sounds good. The "Garbage Plate" on the other hand doesn't look or sound to appetizing. It sound like some concoction that a stoned college student came up with.
Robert Peters It was really good Robert. It was actually a product of the depression, a good filling meal that was very inexpensive.

I bet DW would like that sauce. It really did look like a Cincinnati chili sauce. Bet it was good with those dogs and tators! I'm still trying to figure out how the baked beans helped, but I bet it was good. Nice to see the other camera angles in this video compared to your previous video. Great work Tom!!!

Tom this meat sause looks so very good. I agree with adding the water or stock with the ground beef when making a chili like sauce it makes for a really fine texture

I tried another recipe yesterday that called for a tsp each of cinnamon, nutmeg and ground cloves . That was too strong for me, especially on the cinnamon. I'm going to try this recipe next. I have this memory of a hot dog joint back in my hometown of Buffalo called Louie's Texas Red Hots and their sauce is incredible. Of course it's kept secret, I can't believe after 54 years it's still a secret. But I'm trying to get close to it. There's nothing like that down here in Memphis. Other than buying them in the grocery stores, there's no hot dog stands to speak of.
I would think the baked beans would mask the flavor of the meat sauce. I probably would have gone with just dry foods to cover in the sauce. Looks great though!
bicylindrico The beans didn't mask the flavor of the sauce, it's pretty flavorful and the beans are part of the original "Garbage Plate" from the depression era.
nstead of tomato paste and all that water, perhaps using tomato juice instead would give you better flavor, I'd let it reduce a bit and/or after simmering skim off some of the excess liquid off the top
