Vegan training at The Brando

  • The Brando was pleased to once again welcome Chef Kelvin Au-Ieong of the revolutionary Invitation V vegan bistro in Montreal, Quebec, for a vegan training.
    In order to provide The Brando's culinary team with added innovative and sophisticated vegan recipes using local and organic products, Chef Kelvin and The Brando's Chef Cédrik Ollivaut met with local suppliers. They visited Papeete's market and local farms before starting the training sessions at The Brando. For five days, The Brando's Sous-Chef, Kaito Nakamura, and Commis Chefs, Edmee Temauri and Heirani Chebret, learned how to make new and delicious vegan dishes, featuring local fruit and vegetables. Some of the delicious recipes they prepared included vegetable and avocado maki, lentils burger with barbecue sauce, vegetable curry in a coconut with a tamale and pumpkin tartlet.
