I plan on going to Offatts a lot sense I live real close to there! A quick get out of the house! My daughter was in town this week before starting her PHD in Wisconsin . I only caught a large lady fish!

It all depends on how you freeze them. We always put sand trout in a zip lock bag with water and add salt to the water. When we would thaw them out the meat would still be firm. But have to say all fish are better when cooked up fresh.
I've eaten sand trout before and I think I eat it the same day I caught them and it was good eating, not sure if they are any good if you freeze them first.
