I grew up with a Greek neighbor in Chicago (I am Italian). She made Kourabiedes every time I would go visit (from anywhere I was living at the time). Even on short notice (the smell was unbelievable when she would open the door). She even brought them when she came to visit in California. They are my favo(u)rite :) They melt in your mouth. God rest her soul.

Add a little finely shredded coconut and tiny chocolate chips and flatten a little and they are Danish Wedding cookies like the Keebler brand at the store! I’m not Greek but I knew a woman we called Yai Yai (sp?) who was and she made these every Christmas! So yummy! Thanks Joe!

Actually the German name is Neisenpfeffern. My mother would make these cookies every year for Christmas. She would hide them in tins in my parents closet. I would sneek in and grab one occasionally. Not sure if my Mother ever knew.

I call them Mexican wedding cakes. But during the Holidays they are Snowball. I have been making these since I was a teenager in Middle School were I had Home Economics and I learned to bake. After I got married I would give them out to the Family in coffee cans decorated forChristmas. When My daughter got married I baked lots of them and put them in decorative bags and gave them out as souvenirs for the guests. They were a hit! Now I am older and a Grandmother. and I am still making them. Thanks for the Keto Recipe
