Just to add to the info here, I have the same truck - 2018 Silverado Z71. I have Eibach Pro struts set on the highest groove (2 1/2-inch lift with stock springs). Dirt King tubular UCA's. I am running the stock Z71 wheels 18x8.5/+24. 275/70 18 (33x11) Nitto Ridge Grapplers. These work fine with no problems however the driver's side will touch at full lock on the front of the UCA. Not enough to feel or make noise, or polish through the Powdercoat yet. Have had this setup about 3 years now but not high miles. These all work well together but any wider of a tire might be a problem. I have considered going to a 285/65 18 (32.5x11.5) Ridge Grappler next time. Rubbing on a tubular UCA might not be a big issue if you don't pull hard into a full lock turn. I think a 1/2-inch spacer might solve any issue with 285's running the stock +24 wheels.
Truck looks great with that setup. I have a 2016 Z71 Sierra that i wanted to do a 2.5 rough country leveling kit on but wanted to keep the stock 18 inch rims for now. I don't know very much about the backspacing but im guessing i wouldn't be able to use more than a 275 on stock rims or it will rub. Like the 285s. I had them on my 97 k1500 Silverado. Had a 2.5 rancho lift and was able to use the stock rims on it.
same truck same trim, I put 33x12.5 r17 with 2.5 lift in front and 2 spacer in rear so basically same as your leveling kit and my tire rubs. If you want to get this tire you need to get at least a + .5" offset rims to go with it. Mine rubs on the upper control arm at full lock.
How’s your experience on road noise, ride comfort, handling, MPG switching from stock to these wheels and tire? I have stock 17 inch wheels 265/70/17 now looking to upgrade to something like this
I want to run the same size wheel and tire setup on my 2022. Do you think the 285’s will rub without offset wheels? I would prefer my wheels stay (barely) inside the fenders so i dont constantly fling crap all over my truck.

Mpg has decreased, they are a bit noisier, and a bit harsher ride, but the look is very cool

I would think you'll be fine with the stock wheels
I have LT259/55r20 on stock rims no lift or leveling kit and I have zero rub, I have a LT285/70r17 on the stock spare wheel just in case.
