Thanks for the video. You're a champ. I shied away from catfish for years and years because when I would catch and clean them back when I was younger, they would have that off-putting taste to them. I knew I wasn't doing something correctly. Fast forward to the future and I now have my own lake that I stocked early last year. I added catfish because I wanted to have a fast growing fresh food source. I also have bass, bluegill and crappie but knew the catfish could be the big producer. The first couple of batches I filleted had that off taste to them once they got about 14 inches or longer. I just cut up my most recent stringer the way you've demonstrated and it all came out perfect. I didn't bleed the fish or do anything else but cut them the way you showed and then soaked them overnight in salt water. Much appreciated!

Bleed that fish while it's alive and it will be even better. Nothing wrong with the belly meat, u can even fillet off the grey lining just like the skin. I also use an old towel like you so it doesn't slide around.
You can bleed out other fish like Walleye, Bass, Crappie, and Trout by cutting under the fish's head between the gills or cut through both sides of the gills.
For even more white meat on your fish fillets, try bleeding out your catfish by cutting just above the back fin. Do it when you first catch them so their heart can pump out the blood.
nice now you just need to tell him to get you some blue catfish instead of channels. the meat is so much whiter on a blue catfish channels have like a yellow tint to them.

I don't cut as close the skin as you did the first time. I do get the the centerline red meat out the same you do. And the belly meat also.

The fat was the yellow strip at the top of the fillet.
I sometimes trim that off if it's a big catfish.
