    If you're working with fish with more delicate/thin skin the e-knife can cut through the skin (when you're making your 2nd pass cutting the meat away from the skin) and then you have patches of skin still stuck to the meat and you gotta come back and cut that skin out and thats often tears the entire fillet up trying to do that. To keep your e-knife from cutting through the skin, take your free hand and put a slight pull / back tension against the direction that the knife is running. In other words if you're running you're e-knife from left to right, then take your free hand and pull pull the fish gentlly to the left and this puts a little tension on the fish while the knife is cutting the meat away from the skin. That is the best way to prevent your knife from accidentally cutting through the skin. Some fish have thicker skin than others and you may not need to do that but if you are having problems with cutting through the skin pull the fish against the direction that the knife is running and it keeps your knife from doing that.

    clean the fish at the edge of the table so you can lower the handle to keep blades level. Really helps on skin removal.

    Great review of the knife and putting it to the test on a catfish which has one of the more tougher rib cages to cut through. Also good info on cutting gills to bleed out to reduce blood in the meat during fileting. I also like to get the fish on ice as soon as possible. Great content and demo in a short period of time.

      I don't clean a lot of fish, but I I haven't had any issues. The blades are very comparable to any other elec fishing knife.

    Those slimy sac-like material from the abdomen you were wondering about is sperm sacs indicating a male. The females will have orangeish elongated sacs filled with eggs in their cavity as well.
