Lemon Chiffon Pie - Cast Iron Cooking with the Iron Maiden

    1 TBSP/package gelatin
    4 TBSP (1/4 cup) water (divided in half)
    4 eggs separated
    1 cup sugar (divided in half)
    1/2 tsp salt
    1 tsp grated lemon rind
    1/2 cup lemon juice
    2-3 drops yellow food dye (Optional)
    1 baked pie shell - recommend graham cracker crust pie shell (check out this channel for video on making Graham cracker pie crust • GrahamCrackerPieCrust )
    Optional
    1 cup heavy cream whipped to soft peaks
    For Orange Chiffon Pie
    Follow recipe but replace lemon juice and zest with orange juice and zest, and add 1 TBSP lemon juice.
    Soften gelatin in 2 TBPS water - set aside.
    Combine egg yolks, 1/2 cup sugar, lemon rind, lemon juice, and remaining 2 TBSP water. Cook over a double boiler until mixture is thick - stir/whisk constantly. Once thickened remove from heat and stir in the softened gelatin and (if desired) add a few drops of yellow food coloring. Beat egg whites until frothy, gradually add remaining 1/2 cup of sugar, continue to beat until stiff peaks are formed. Fold lemon/gelatin mixture into egg whites and pour into prepared pie shell. Chill until firm. Serve plain or with whipped cream.

    i just perfected my mums lemon chiffon pie recipe. same basic ingredients technique is key. I also put whipped cream on top. 2 quarts heavy cream, [not whipping cream it has chemicals in it.] 8 teaspoons sugar, 2 and 3/4 teaspoons vanilla, and 4 tablespoons fat free milk powder [for a flavorless stabilizer]. whip it up in a mixer enjoy.

    you can probably cut whipped cream recipe in half. but can never have to much in my opinion.
