    Any idea what temp range is good for crepes, or it simply comes to expeience? Perhaps I should get a heat gun to measure temps.

      you want a medium to medium high heat - not sure what temp but a drop of water should sizzle when dropped on skillet and crepe should cook in 1-2 min (per side) Hope this helps - happy baking

      @@lindahiortdahl6679 Sounds like you’d be in the 375°F-425°F range by your descriptions in the comments. If the cast iron pan is smoking, you’re 475°F and above. I use an infrared thermometer when I cook on cast iron - which is every day. I hope this helps.

    Can you you do this over a camp fire? How much heat do you use to make them? Wonder how one would controll the campsite flame though. .

      great question - I would say yes - I use a medium flame - since they cook pretty quick I would probably put my pan over the flame, move to the side, add crepe batter, cook, flip, cook remove crepe and put pan back over the flame. Good luck - let me know how they come out

    If you cook up any kind of pork like bacon or ham in a frying pan the fat left over is lard.

      The only thing you have to watch with ham or bacon, or even sausage is their seasonings, or the smoke flavor in the meat which can affect the taste of the tortilla

    I really don’t like to buy bread as it either stupidly expensive these days or packed with chemicals that I really don’t want to eat. I’ve had a few attempts at making flour tortillas but I think I’ve missed out leaving the dough to rest. I actually find food preparation a really great way to connect with someone.     i just perfected my mums lemon chiffon pie recipe. same basic ingredients technique is key. I also put whipped cream on top. 2 quarts heavy cream, [not whipping cream it has chemicals in it.] 8 teaspoons sugar, 2 and 3/4 teaspoons vanilla, and 4 tablespoons fat free milk powder [for a flavorless stabilizer]. whip it up in a mixer enjoy.

      sorry to hear that - my first guess is that your yeast is old - give it a little more time, try putting your dough in the oven, (oven off) pour some boiling water in a pan and place in the oven - the steam/heat will help the bread

    Your Mother-in-Law's recipe is incomplete. Traditional Slovak Pascha should have a yellow center made from part of your dough amended with several egg yolks and yellow cheddar or Velveeta, with or without yellow food coloring. It is shaped into a sausage shaped roll. The main dough is rolled out. and the yellow dough is placed on the main dough. The main dough is rolled over the yellow dough forming a long cylinder shape. This is placed in an angel food cake pan or cast iron skillet with a juice glass in the center to keep a hole in the center of the baked loaf.

      Pretty sure the recipe predates the adoption of the metric system by hundreds of years. When this host’s grandmother-in-law learned the recipe, her family likely used a communal oven and whatever units preceded metric. Having watched tons of traditional French and Italian bakers, I can affirm that they go almost entirely by feel. The IRON MAIDEN has the metric units in the video description! I hope your Paska turned out great.

    Linda, what is that Christmas tree shaped looks like cast iron you move under the bread? Is that something you heat up to keep the oven warm (ie added mass) when opening the door?

      LOL - no I think it was a pan I was seasoning and forgot to take out of the oven before i preheated it. I do not usually keep an extra pan in the oven for baking. If I want to make sure the oven is up to temp after I open the door I will set the oven temp to 25 or 50 degrees higher than baking temp, after preheat open oven, put your stuff in, close door and reduce oven temp to desired baking temp. 🙂

      it is cast iron and it is a great pan - I love it - but they do not make them any more. I got mine from someone in the Cast Iron Mafia on Facebook. Just need to look around. I also have a couple of Vieanna loaf pans' - it is a double loaf pan with a slight taper at each end - they are really nice as well and a little easier to find.

    Thank you for posting this. My husbands grandmother made an almond puff recipe and everyone has said “don’t try it you’ll never get it right” and I am determined to get it right. I’m making it tomorrow so I looked at similar recipes and videos to get an idea of what the written directions meant. Lo and behold, the recipe is actually a Betty crocker one! I didn’t understand mixing the eggs in until i saw your video. Her’s has 1/4 can Of almond filling on each one before the topping but this really gave me a great idea about what the consistencies should be. I also really appreciate your comment about the third egg on other’s comments. Thank you again!! I feel confident I might be able to do this!

      no, but if you go to Joanns or Michaels they both sell them, and you should be able to find on Amazon as well, they have lots of options, wire shape as well as metal used so you can get silver if desired.
