When I lived in the USA most of the products are sugar laden and in general very difficult to eat healthily. USA should be a country leading the way in health and nutrition. Instead of that USA are the unhealthiest nation on earth with 2 out of 3 people morbidly obese. In stark contrast we have emerging or third world countries living a basic but very much healthier way of life. Its just mind blowing how the USA is travelling down the wrong road just for the sake of greedy corporations.

The recommended non-fat/high carb diet of the 1990s really kicked of the obesity/diabetes epidemic in America IMO.

I used to live a few houses away from a small bakery. The smell was so gorgeous I often queued up outside before it opened at 5.30 in the morning and bought three loaves - white, wholemeal and granary. They were all so good I just had to have all three. Bakeries like that no longer exist, bread barely smells and has no taste (unless its a revolting rubber sourdough). Almost every loaf you can get contains soy flour and oil (if its not bagged it still contains it without a declaration) and that's one reason it is crap, but the other reason is the FLOUR. Even when I bake at home I cannot get the taste and flavour that bread used to have. The reason is that the variety of wheat that is monocropped in the big grain producing countries has been changed TWICE since my bakery closed. The seed suppliers like Monsanto have replaced healthy wheat with a wheat maximised for productivity and pest suppression - not nutrition and flavour. The lack of good grain is a worldwide affliction.

For most Americans, I recommend making sourdough rye bread at home. If you eat bread at all. No "store shelf" bread. Europeans North and East of the Rhine River traditionally at rye bread and drank rye beer. That's well documented in the historical record. Wheat dominated Spain, Italy and Southerly parts of France. Rye is far lower in gluten and has different proteins. Now do "gluten sensitivities" around the USA make sense? Yes, now it all makes sense. We must also now worry about what we DO NOT WANT "in our bread." Yoga mat chemicals keep factory store bread "spongy." Nobody sane wants that anywhere in their bodies.

Use only unbleached stone-ground organic flour (pref. rye), water, and sea salt or rock salt. Nothing else! Make your own sourdough starter from the flour and water. No yeast. That is what basic bread has been for thousands of years. This kind of bread is available at some stores in Canada, and I'm sure in the US as well. But it costs $7.99 per loaf where I live. It’s an extremely sad statement of fact that our government don’t care about any of us, 85% approx of all foods sold in any supermarket are unhealthy and contributing to people’s long term health issues, instead of legislating against supermarket chain telling them, to source good organic produce at a prices we can all afford more easily. If they really wanted to reduce the backlog for hospitals or doctor visits by 30% it would be very easy to do. But it’s not in their commercial interests.. I haven’t bought bread since the pandemic we make our own twice a week from the best flours and substances we can find. It really is not a lot of effort as most people think.. We frequently make and give away loaves to lots of neighbours and friends who rave about it amongst themselves.😂. The so called "Italian bread" is not Italian for sure, we don't add sugar or seeds oil to our bread. Sometimes we do add a couple of spoon of extravergine olive oil to focaccia bread. I bake my bread home and is not only easy but working the doh is so relaxing, let alone te delicious smell of fresh baked bread.

I had to watch this! We gave up bread many years ago. There's a guy on youtube that ordered "high end" bread that he'd been buying for years....but this time, it was different. He demonstrated how "different" it was, by washing his car with it. That's right. The loaf did not break up and come apart at all. It asked just like a commercial sponge!!! And, let's not forget that around 1967 Congress arbitrarily changed the required commercial baked goods additive of iodine....to bromine. Any takers on why that happened. Hint: iodine and bromine are the same molecular size.

    • @di4085

Today A lot of people are lacking iodine. Bromine actually strips away iodine.

Ezekiel is the only bread I eat too. It is kind of a pain getting slices apart, being frozen. Using a butter knife works pretty well to separate them. I normally put a couple slices in the toaster to thaw them.
