I have been getting confused for, forever between how and when to use Sodium Alginate, Xanthum Gum, Agar-Agar, Methylcellulose, Arrowroot Powder, Tapioca Starch, Cornstarch, Pectin, Potato Starch, for the longest time. The part of your video on temperature around 09:00 was extremely helpful. (If you can do a video on your take on these and some cool places to use them, it would be great) I have been trying to teach myself high level food chemistry and experiment with different food combinations to make good vegetarian/vegan cuisines. Best Cheesecake recipe EVER! Im not overreacting! I made it last night followed the exact instructions. Ive made alot of cheesecake with alot of recipes and this is now my go to! Usually my cheesecake would be a bit dense because of so much cream cheese,but the whipping cream, yogurt and only about 2.5 packages of cream cheese its so soft and amazing.
