Tons of Green oranges! Preserved their juice as Cordial & candied the peels as well | Traditional Me

- Even though the summer has arrived with all the trees laden so heavily with seasonal fruits like mangoes, rose apples, mandarin, pineapple, indian olives, star fruits & passion fruits, people in Sri Lanka are not in a happy mood to welcome the season. Because of the ancient tradition of our culture, we lit the new hearth according to the auspicious timings to preserve our ancient traditions, yet thousands of people were not in a mood to celebrate the Sinhala & Hindu New Year with such indescribable suffering that they are going through. Yet as I described earlier, all the trees in the vicinity were heavy with varieties of seasonal fruits which was like a carnival. Every tree was smiling with fruits seems they are saying like "don't worry... things will get better soon!"
The sweet green oranges tree in our ancestral house was heavy with light yellow green oranges(Pani dodam in Sinhala). The green oranges becomes sweet and luscious with nectar when they become light yellow. I picked up so many oranges because Grandmother loves them and to make juice out of them. But when I saw the oranges basket filled with green balls after finished picking them, I was tempted to keep them and drink for long time!
So I mixed sweet green orange nectar and passion fruit juice to make a fresh and tangy cordial. These green orange's skin contains lot of citrus so the skin of sweet green oranges, sour oranges and mandarin should be removed before squeezing their juice out. Otherwise the citrus will get mixed with the sweet nectar of the fruit. Since I didn't like to waste their skin, I made candied peels to be used later. Since the skin has lot of sour citrus, the skins were boiled twice and the water was strained out. Few pepper corns and a cinnamon stick added an amazing flavour. By adding the four passion fruit juice to the orange cordial, made it a sweet and sour fresh cordial to be enjoyed.
In an evening after few days, I got this idea of making steamed cake with pandan juice and white coconut oil. I added home made chopped ginger preserve and candied green orange peel to enhance the flavour. I was about to make tea while the steamed cake were steaming but gave up that idea since brother came to the kitchen and took the cordial bottle with few tonic water bottles to make his secret something. Well brother's tonic water mixed drink was excellent. Do you know what will happen to my cordial bottle if I give my brother a compliment about the tonic drink? Yes you thought right! My cordial bottle that I planned to keep for a month won't last long even a day. Yes you all know my chef brother! Though I talked about my brother, I am sure I will too finish the cordial bottle before my brother, after tasting the yummy aloe vera drink which he made for grandmother, the delicious mango drink which he had made with mango pieces, the rose apple juice that he made for me and the mixed juice that he made with mango, rose apple and aloe vera. How could anyone wait without having those delicious drinks again after tasting it once lately. What ever said, the mouth-tingling drink and the soft steamed cake was an ideal combination.

මහගෙදර වත්තෙ අලුත හිටවපු පැණි දොඩම් ගහෙත් මහ ගෙඩි ගොන්නක්. හොඳට පැහිලා පොත්ත ලා කහපාටට හැරෙන්න පටන් ගත්තු ගමන් තමයි පැණි දොඩම් ගෙඩිය රස, ඒ වගේම හොඳටම ඉස්ම තියෙන්නෙත් ඒ කාලෙ. ආත්තම්මත් ගොඩක් ආස නිසා පැණි දොඩම් ගොඩාක් කඩාගෙන ආවෙ ඒ දවස් ටිකේම බීම හදල බොන්න හිතාගෙන. ඒත් කොලපාට බෝල බෝල පිරුණු දොඩම් කූඩෙ දැක්කම මේ දොඩම් ටික තව ගොඩක් කල් තියාගෙන බොන්න ඇත්නම් කියලමයි හිතුනෙ.
ඉතින් ඒ හින්දා මම පැණි දොඩම් යුෂ වලින් කෝඩියල් එකක් හැදුවා. මේ වගේ කොළපාට දොඩම් වර්ගවල පිට පොත්තේ පැඟිරි ගතිය ගොඩක් වැඩියි.ඒ නිසා පැණි දොඩම්, ඇඹුල් දොඩම්, සිදරං වගේ ඇඹුල් ගෙඩිවල යුෂ මිරිකන්න කලින් දොඩම් ලෙල්ල ඉවත්කරගන්නම ඕන. එහෙම නොවුනොත් යුෂ මිරිකද්දි පැඟිරි යුෂත් එකට එකතු වෙනවා. ඉතින් මම එහෙම ලෙලි ගහගත්ත පැණි දොඩම් පොතු වලින් කැන්ඩිට්පීල් හැදුවා. පැඟිරි ගතිය වැඩි නිසා සැරයක් දෙසැරයක් දොඩම් ලෙලි තම්බපු වතුර එක පෙරාගන්න ඕන. කැන්ඩීඩ්පීල් වලටත්, කෝඩියල් එකටත් අමුතුම මිහිරි බවක් එක්කරන්න කුරුඳු පොතු කෑල්ලකටත්, ගම්මිරිස් ඇට කීහිපෙකටත් පුලුවන් වුනා. ගෙදර තිබුන වැල්දොඩම් ගෙඩි හතරක යුෂත් එකතුකල නිසා පැණි දොඩම් වල පැණි රහට අමතරව වැල් දොඩම්වල අඹුල් රසයත් කෝඩියල් එකට මුසු කරගන්න පුලුවන් වුනා.
දවස් දෙකතුනකට පස්සෙ හවසක රම්පෙ යුෂයි, සුදු පොල් තෙලුයි එකතුකරල වන්ඩුවෙ තම්බගත්ත කේක් හදන්න ඕනෙ කියල හිතුවා. කලින් හදාගෙන තිබුන ඉඟුරු දෝසියි, එදා හදපු කැන්ඩිඩ්පීල් දෙක පොඩියට කොටු කපල ඒ මිශ්‍රණේට එකතු කරගත්තා. කේක් ටික වන්ඩුවෙ තැම්බෙද්දි තේකක් හදන්න ලෑස්ති වුනත් මල්ලි ටොනික් බෝතල් වගේකුත් උස්සගෙන ඇවිත් කෝඩියල් බොතලෙත් අරගෙන ගිහින් මොනවද හදනව කිව්ව නිසා තේ හදන්න ඕන නෑ කියල හිතුවා. ඇත්තටම ටොනික් වතුර දාල මල්ලි හදපු බීම එකනම් හරිම රසයි. ටොනික් වතුරටම ආවේනික රහත් එක්ක කොඩියල් මිශ්‍ර වුනාම එන්නෙ අමුතුම රහක්, පොඩියට කෑලි කපල දාපු අඹ, කෝමාරිකා, ජම්බු නිසාත් බීම එක බොනකොට හැපෙද්දි හරිම රසයි. කොහොම වුනත් බීම රසයි කියල බැරිවෙලාවත් කියවුනොත් එහෙම මාස ගානක් තියා ගන්න හිතාගෙන හිටපු කෝඩියල් බොතලේ තව දවසකට වැඩිය නම් තියාගන්න හම්බවෙන්නෙ නැහැ. දන්නවනෙ අපේ මල්ලිගෙ හැටි. හැබැයි ඉතින් කෝමාරිකා දාල ආත්තම්මට හදල දීපු බීමයි, මල්ලිගෙ අඹ කෑලි දාපු බීමයි, ජම්බුයි අඹයි කෝමාරිකා සේරම එකට දාල මල්ලි වෙනම හදාගත්ත බීමයි රහබලන්න මටම හිතුනත් කෝඩියල් එකට ඒ ටිකම තමය් වෙන්නෙ. ඒ කොහොම වුනත් පුලුන් වගේ වන්ඩු කේක් කෑල්ලක් එක්ක දිව කිතිකැවෙන බීම එකක් එදා හවස්වරුවට හොඳටම ගැලපුනා.

After a long wait I got to see some absolutely lovely unusual dishes especially the cordial and also your brother’s sparkling drinks. The orange peel preserve and infusing it into the steamed pandan leaves cake also looked so inviting. What an amazing preparation of orange cordial, which Mallee used to concoct a very refreshing drink with water guava and mango. Nadee, the fairy steamed up some delicious cup cakes. Together both the siblings, as usual impressed their loving grandmother with their culinary skills.
