For those who think the run is fake. It is a Set Seed Speed Run. He one shots the dragon due to a Knockback exploit that the arrows utilize. The portal also is Pre-lit because of this seed, since the portal is divided in 2 chunks. This is all legal and allowed in the Set Speed Category of Minecraft Speedruns.

I was just going through videos on my UA-cam feed and didn't even cared to look at the title, it was when bro was in stronghold when I realised it was a speedrun and I said "What?"
Basically, while getting knocked back by the dragon, the closer you are to the center of its hitbox, the more speed you will gain by being knocked back. If you shoot with the temporarily high speed that this knock gives you, then the arrow will also receive this velocity. And because an arrow's damage is proportional to its speed, how fast the dragon can make it is actually enough to oneshot it.

It follows an uncapped inverse square, so you can get almost infinite speed technically (if you stand in 0.00001m x 0.00001m area)

It's on an older Minecraft version, you can do it by using momentum
Basically, while getting knocked back by the dragon, the closer you are to the center of its hitbox, the more speed you will gain by being knocked back. If you shoot with the temporarily high speed that this knock gives you, then the arrow will also receive this velocity. And because an arrow's damage is proportional to its speed, how fast the dragon can make it is actually enough to oneshot it.
