  • Learn how to make Mutton Stew, a very famous dish from Kerala only on Get Curried.
    Kerala cuisine offers many delicious dishes that are popular among foodies all over the country. One such dish is yummy Mutton Stew. Pair the mouth watering Mutton Stew with Idlis or Appam or Dosa.
    So watch and learn how to make mutton stew with Sneha Nair on Masala Trails.
    Ingredients:
    1/2 cup each of sliced carrots, potatoes, beans
    2 - 3 tbsp coconut oil
    2 pieces of cinnamon
    4-5 cloves
    3 cardamom
    1 inch chopped ginger
    3 green chillies
    8-10 curry leaves
    2 chopped onions
    salt
    300 gms of mutton meat
    8- 10 peppercorns
    300 ml of coconut milk
    curry leaves
    2-3 tbsp coconut oil
    Method:
    - In a thick bottomed pan boil some water.
    - Add vegetables in the boiling water. Keep it on a high flame.
    - In another pot heat some oil and add, cinnamon, cloves and cardamom.
    - Once the spices are semi cooked add, garlic, ginger, green chillies and curry leaves.
    - Add 2 chopped onions and salt, let the onions cook till they become translucent.
    - Add 300 gms of mutton meat in the same vessel and cook till the color of the meat changes.
    - Roughly grind peppercorns and add it into the mutton. Add half the coconut milk and mix well. Cover with a lid and leave it on low flame for 10 - 15 mins.
    - Drain out the water from the boiled vegetables. Add the vegetables into the mutton mixture and add the remaining coconut milk and mix well.
    - Let the mutton and vegetables cook in the coconut milk on a low flame for another 5 to 10 minutes.
    - Add some coconut oil and some curry leaves
    Mutton Stew is ready to be served!

    Fundamental mistake of boiling vegetables separately as it oozes out all the goodness and flavor. Ideally thin coconut milk needs to be added first after mutton and then goes the fresh veggies followed by thick coconut milk.

      Very true! Flavours and nutrition is lost as well. Plus coconut milk splits when cooked for too long(boiling mutton in it), the beauty of Indian cooking is there is a method to the madness and a reason for the order and combinations and the time frame besides obviously the ingredients.

      The thick coconut milk will curdle if added to the mutton while boiling...ideally should be boiled with thin milk or second extract.... and there is no chance indian mutton will boil without a cooker in ten minutes.....secondly the veggies needs to added last and boiled in the same broth of mutton and lastly thick coconut milk must be added.

    Lovely recipe! Makes me think of my Kerala granny! A strong-willed bristly and stern lady with a golden heart, running a huge farm and investing in the Stockmarket, and she made "The Mother of All Biryanis" which took all morning!

    Great. I doubt if the mutton would be cooked enough in 30 minutes.

      These are small pieces. If your pieces are big (but the chevon is good quality) it'll cook tender in 45-55 minutes.

    looks like a good recipe. Mutton will take way longer than 15 mins to get tender without pressure cooker. in the end I will add a proper tempering of mustard seeds and curry leaves. other than that its an authentic malabar stew recipe !

      Exactly my thought, the recipe is great but Mutton will definitely take more than 15 mins. Also which oil you would use for tempering?

    I went to Kerala and this recipe is actually(usually)made with beef, so umm yeah. But India is a diverse country and different opinions and values can exist together.

    real southern 'curries' (karis) have lots of liquid and are almost soup-like with big chunks of meat and vegetables, whereas stews like this also have a lot of liquid (high liquid-to-meat/vegetable ratio), but it is a lot _thicker_ of a liquid. That is what differentiates the two, 'curry'(kari) vs. stew.

    The vegetables cook much faster than meat. If before transferring to meat stew pot, vegetables were 80% cooked, it is hard to believe in another 10 mins meat is going to be cooked along with vegetables. If you want to cook meat in open pot, it could easily take up to or more than an hour.

    Thanks for this lip smacking recipe. However my concern is will the mutton get cooked in 30 mnts ?? As usually mutton takes at least 50-60 mnts to get cooked without pressure cooker. In that case should we add the veggies when mutton is 90#% cooked. So that it doesn't get mashed in the process. Let me know your opinion pls. And also can we pressure cook the mutton with 80% cooked and then follow the rest of the process.

      Agree. Since mutton takes longer to cook and when it is about 90% done add the vegetables to the same pot and by the time mutton is done vegetables should be done just right. No need to boil the vegetables seperately and when you cook with mutton it will have all the flavors of the meat, the coconut milk and the nutrients of the vegetables.

    without pressure cooker it is possible to soft mutton.coconutmilk is fresh or powder Coconut milk.

      without pressure cooker u need to cook the meat for half an hour , keep checking and stirring in between, some meat can take 45 mins too

      keep adding little water until the mutton is completely soft .if u want to quicken the process then before u start the recipe Just marinate the mutton in some salt and vinegar , these will tenderise the meat a bit

    What is the point of boiling all the nutrients out and throwing that water and eating raw coconut milk?
    Because it breaks when you cook it well!
