Shrimp Rice Noodle Stir-Fried: How To Use The Shrimp Shells For A Lot Of Umami Flavor

I always tell my daughters when they eat shrimp not to throw away the shells because they contain a lot of umami flavor.

250g rice noodles
400g cooked shrimps
1 onion
4 garlic cloves
80g mushrooms
4 Napa cabbage leaves
1 carrot
½ pepper
1 spring onion
2 eggs
1 tbsp fish sauce
1 tbsp light soy sauce
1 tbsp oyster sauce
½ tsp salt
¼ tsp ground pepper
10cl water
3 tbsp vegetable oil
