@@chrisdelmonte983 This is not pancit. Pancit is a Filipino version that taste completely different. This is Cantonese rice noodle. Not a lot of chinese restaurants have this in thier menus but they usually the Singapore rice noodles which is the same with with added turmeric powder.

這炒法跟我們家的差不多 用料也是差不多 不過有些順序有差 蛋的話會弄成蛋酥 然後會用蝦米 紅蘿蔔絲跟高麗菜會在洋蔥肥肉斯爆香後下去一起炒 另會還會放泡過水的乾香菇絲 炒好後是會醬汁都加入好後才放米粉下去伴炒 最後才放芹菜段 有時候還會撒些油蔥酥 最後裝盤在放上蛋酥

我来总结一下:第一步:放很多猪油,猪油融化以后把鸡蛋滑入,鸡蛋成型后盛出来;第二步:再放大量的猪油,把葱头、洋葱、香菇、虾米加入炒得稍稍发黄的五花肉里;第三步:放入发好的米粉丝继续炒,炒均后加入之前煎好的鸡蛋,再加入芹菜,红萝卜丝炒,如果太干?多放香油;第四:快出锅的时候,把豆芽和切的很细的包菜丝加入底部,闷一会拌匀;第五步:把芹菜的后半段和葱的后半段加入,放盐放糖放鸡精酱油,拌匀后出锅。(我小侄女超爱吃这个,我要把它记下来,回中国去做给她吃。)
酱油要先早放。不然米粉沾色不够时间翻动。鸡精是最后出盘前放的,芹菜萝卜豆芽要好时加的。盐和胡椒应该是放蔬菜的时候加的。这样蔬菜才会快熟和出味。
如果炒肉时,可以熬到多汁先收起来,最后就可以代替鸡精。冬菇蚝油鸡汁更入味。

只有我看出来了,这个视频是在兰州的东部市场里面卖海鲜的附近拍的
搜了youtube上几乎所有名家煮食的频道上面的炒米粉演示,这一个是真的在炒米粉本身,而不是炒其他配菜之后拌米粉。可能新加坡、台湾和香港、东南亚其他地方的口味和习惯不一样。但这一个量还是最大的,能保证几乎所有的米粉都被炒到,真的不简单。火候也刚刚好,米粉会有锅气,但有不会焦糊,真的是街市上身经百战的高手!👍👍👍

在外地生活最想念的就是温州的早餐。除了炒米粉之外,我印象比较深的还有一样糯米饭:蒸制的糯米配上一撮肉松和酥脆的老油条,再来一大勺卤好的肉汤做浇头,汤的咸鲜、糯米的韧和油条的脆交织在一起,一口下去对味觉的冲击真的久久无法忘怀。只可惜我自幼肠胃不佳,每每吃多了就会腹痛,想来也是有些遗憾了。

用豬油,大鍋子炒米粉,正港仔,有台味!真想吃一碗!
