    I know some don’t like pie made from a pumpkin because the taste is different from the canned pumpkin. That’s because most of the “pumpkin” in the cans are really made from different kinds of squash. So if you only have some other winter squash try them out in a pie too I like mixing them to find different flavors. Sweet dumpling squash has a kinda chestnut flavor. Hubbard and butternut are also good ones to try.

    Thanks Carolyn this is now my go-to recipe!. Amazing with whipped cream! I make pans of this without crust, also great with crust. I have eaten pumpkin pie for breakfast for years & thought I was weird for it , guess not! I've used both pie pumpkins and decorative pumpkins , both worked. I also boil, then season & bake seeds. Pumpkin the gift that keeps on giving!

    Thanks for this. I just made two pies and still have a gallon of puree left. (Kiddo and I bought a lot of sugar pumpkin lol)
    will definitely try this recipe as I love low sugar high protein snacks and treat. Idahoans represent. 😀🙌

    Pie's in the oven, right now. I halved the recipe cut back the sugar a bit and added 4 eggs instead of 6. I love how easy this is. I'm making the crustless version.

    I've been experimenting with homemade pumpkin pie for years, I'm excited to watch this, but letting the ads play first.
    Any way I add 2 secret ingredients, cracked pepper and fresh raw honey.

    I done this and canned it. Or course I didn't add the milk and eggs until I was ready to use. I done this because I was worried the pumpkins would go bad before time to use. I don't have a cellar and great place to currently store produce. I am baking today for tomorrow so far everything is looking great.

    Ok! I’ve made this two times now and I have to say WOW! I like to make (2) in a roll pan and freeze. So yummy and thank you for such a wonderful recipe. I think the custard texture is marvelous and Oh! My husband who dislikes pumpkin pie likes this one
    I’ve made pumpkin cheesecakes in the past my family including my husband loved but I used a pink banana gourd. I cannot find them for sale anymore. Guess I’ll have to grow them. I prefer them over the sugar pumpkin

    I make a version of James Beard pumpkin pie which calls for a bit of calvados (apple brandy) and some spices including finely chopped candied ginger. The last few years the pie crust has been eliminated (gluten intolerant) the pumpkin mixture strained, then baked as a pumpkin custard in a water bath. So silky and so good.

    Carolyn, I have 2 questions that are not related to this episode. 1) Where did you get your wonderful stainless canning funnel? I'm trying to find one with an open handle like yours that I can hang on the side of bowls. 2) Would you do a tutorial on how you care for your cast iron pans? From when you first get them to general maintenance? I have learned so so much from you all. Thank you!

    Love, love, love this video on Pumpkin pie from the pie pumpkins. You make everything look so simple. I love to cook and do not have much experience from actual pumpkins. I have been gifted with 3 pie pumpkins so I will be making homemade pumpkin pie soon. Thank you very much!

    Thank you for this method. So much better than cutting and removing seeds first. Did one today. Two pumpkin pies cooled on the counter. Have about three more cups of puree that I will probably freeze. Happy Thanksgiving!

      Curious. How is that easier ? Seems easier to cut pumpkin first. Clean it and spoon it when cooked

      @@ashleyschellinger6052 It is difficult for me to cut into our squash when raw. I have to have my husband cut our acorn squash for me. I just don't have the strength.

    Actually, I roasted my first whole pumpkin last night and I put it in stem and all, not even stabbing it before roasting it. It was a fairly small sugar pumpkin and took about 70 minutes to get soft. At that point, the stem came right out. Interestingly, the stem itself was barely warm.

    Hi there you mentioned you added a pumpkin pie mix in the ingredients? Can you please advise what's in that? I have never tried pumpkin pie but my husband has and loves it! Unfortunately he doesn't bake and I don't believe its readily available here in New Zealand. Love you videos by the way!

    Can you use your pumpkin seeds to plant after you have cooked it? I think not. So it is best to cut out the seeds first then cook, right?

    Wonderful! I have your breakfast casserole download, which I'm assuming is the same custard base you use here. I literally was just thinking about whether I could use that for my pies. I made the custard for company last week and it was a huge hit.

    You can put your washed pumpkin in the microwave till the knife inserted comes out easily. No fighting with peel. Just scoop out the seeds . Either bake the seeds or feed them to the chickens.

    Hey! You said nothing was store bought in your pumpkin pie, everything was homegrown. I am curious about that tho', since there is brown sugar & vanilla in it. Are you actually growing your own sugar cane & vanilla beans, or is there something I am missing here? Are you growing your own grain for the crust too? Thanks for the recipe, I am working on pumpkin pie tonight!

    I’ve always wanted to try this but thought too much work boy was I wrong, I gave 1/2 a gallon ziplock bag left with custard to make at least 4 more pies and the taste is sooooo different from the usual frozen pie I have always purchased next time I am adding more sugar it just wasn’t sweet to me and I added 1/2 cup of maple syrup

      Once cured, pumpkins can be stored in a cool and dry area for several months.

    It looks delicious and do easy. Ok, YOUR STILL GETTING EGGS FROM YOUR CHICKENS??????? We are fairly new to chickens. We haven't gotten eggs since we got a new flock to add to our girls. It's been 4 months. Can anyone tell me why this is? The new ones are 6 months now and we do have a head lamp we just added because of the cold. I miss my eggs!!!
