    Before mixing the pumpkin puree with the other ingredients, put it in a skillet and gently heat it for 15-20 minutes, stirring occasionally. This will help release the natural pumpkin flavor, so that the finished product will taste more strongly of pumpkin. Works with both homemade and canned pumpkin puree.

      @@ramz1455 A bit. Water evaporates when heated. But probably not a lot - the temperature should be fairly low. It's not like you're simmering it.

    As a Scandinavian, I always wanted to try pumpkin pie. It's so iconic to American culture, and I love American cuisine. Especially soul food and comfort food, like chicken and waffles and banana pudding. Finally gave it a go. It was real nice, even with the "halloween" pumpkin and sweetened condensed milk from a can. Thanks! Next I want to try to make Gumbo 😁
    Edit: was lucky to find the smaller pumpkins of the Hokkaido variety, and had to make it all over again. 10/10 in the yum yum scale. And no need for cheese cloth this time around!

      I just moved to Sweden (near Stockholm). Do you know where I can buy pumpkins? I can’t find them at the big chain stores like Ica Maxi, Coop, and Willy’s 😢😢

      @@nina-um4mm Hey Nina 👋 I would imagine most if not all the supermarkets carry "Pumpa" between Halloween and approx. May. The smaller stores usually comply when you ask for them to acquire something they do not sell. If you cannot find Hakkori then butternut or something similar is supposedly just as good, and a lot better then the carving pumpkins! I've been making this a lot and it always turns out amazing. Good luck 👌

    Back in the 90s, the pumpkin carving kits you could get for Halloween with the tiny orange pokers and scoops had a pumpkin pie recipe on the back, with instructions for how to roast a pumpkin. My mom followed the recipe on a whim one Halloween and we've never gone back - real pumpkin is just SO much better than the canned stuff! She always brings the pie for Thanksgiving and I've started making it when I moved out too. People think it's a secret family recipe, we just don't mention where it came from originally!

      I hope you bought pie pumpkins and didn't try to use your leftover a jack-o-lantern. They don't include those recipes anymore because people WOULD do that, not understanding the difference, and since Jack-o-Lantern pumpkins are not made to be eaten they are sprayed with pesticides and whatnot that are not safe to consume. Made a lot of people sick, plus they taste awful. I have to tell this to people every year, especially for how popular it is to waste absolutely nothing, people don't wanna just throw them away. But they do make great compost.

      @@GiraffeFlavoredCondoms that's not completely true. Most people have common sense and wash their pumpkins before cutting or carving. The majority of pumpkin farms are organically grown with additional fruit trees and don't spray pesticides as they are banned - the one's that make you sick. We have ate the same pumpkins from the local patch my entire 53 year's on this Earth & never been sick from any pumkins, apples, ciders, zucchini, all the items they sell & make fresh in the store they run. They also sell to the local grocery stores & their apple cider & cider cookies are one of the only ciders sold commercially. Pumpkin is also used as a vegetable as well just like a sweet potato or squash would be and added to soups, etc. As long as you're cleaning your pumpkins and breaking them down by baking them til fork tender you should have no problem making a simple pumpkin pie recipe.

    This turned out Uh! Maze! Ing! Took me about 4 hours from start to finish but TOTALLY worth it!!!!!!!!!! I suggest baking the pumpkins and making the dough the night before baking. HUGE HIT! So perfect! So much difference and so much more delicious than store bought. It was all gone in no time.

      @@MextizaCalifa I have to admit I added a little maple syrup, but found out it was probably not needed, but still good. With all the carmelization in the milk reduction, I dont think you will miss brown sugar

    You, sir, have helped me immensely with my cravings for American food. I can't get alot of inexpensive American foods in The Czech Republic, so I've been craving my homeland way too much.
    Though, this place doesn't have sugar pumpkins, so I only had to substitute it with Butternut Squash. Tastes exactly the same, just a different winter squash! Still, thank you for the recipe!

    I followed ALL of these instructions and got the best pie ever. I did double the ginger, and use two different kinds of ground cinnamon! The carmelized milk reduction is the most amazing thing I ever tasted, and really made the pie great. i used a medium sized pumpkin ( not a pie pumpkin particularly) that I had grown from seed and it was very rewarding compared to watching them collapse in the compost pile in January!!! Even roasted the seeds in tamari and olive oil. what a treat! Thank you for this comprehensive and awe inspiring recipe! You hit all the high notes!!!

    I made this yesterday and wow thank you sm. I had never made pumpkin pie so I was nervous making it from scratch(I used premade crust and condensed milk bc we had that). But it was not too sweet, just right. The flavors blend beautifully.

      Just remember, there are raw ingredients and refined ingredients. Raw ingredients have to be purchased, but refined ingredients can be made with kitchen equipment in your house and raw ingredients. Granulated sugar is an example of a raw ingredient while powdered sugar is a refined ingredient you can make with granulated sugar, corn starch, and a food processor. It's also cheaper to make your own powdered sugar ,net cost wise, than it is to purchase it.

    Joshua, whenever I bake a pumpkin or butternut squash, I always turn it skin side down for the last 5 minutes and add an additional 5 minutes baking time to the end. This way the steam escapes and I end up not having to drain or squeeze out the liquids.

    So I'm pregnant and I've been craving pumpkin pie. I live in the country and there's a pumpkin farm 5 minutes from me. Every time I drive by I tell my toddler "next month mommy is going to get some pumpkins to make us pie!" I guess UA-cam was listening because this video was reccomended today 😂 not disappointed.       @@autumnolguin1990 pumpkin's are plentiful right now both in the store and in the fields. You can use any type of pumpkin you can find to make pie. If it's a larger pumpkin you just need to adjust and add more sugar and spices.

    I’ve been following this recipe for 3 thanksgivings now ( pie pumpkin is roasting in the oven as I type). I don’t like pumpkin pie, but my kids loved it so I made it.
    Now it’s become the only pumpkin pie I’m willing to eat and enjoy! Thank you!

    Just made this yesterday and came out perfectly! not a crack to be seen, the crust was wonderful, and the filling was the exact texture. I didn't have a blender or food processor so I used my stand mixer for the puree and my hands for the butter, but it all came out just fine! I bet you could even use a cheap hand mixer for the pumpkin if you're in a pinch.

      @@zirvufarz8277 so I have this prehistoric bacteria here. We're gonna let this guy breed over the course of millions of years. Once he's done, we're gonna have a baby calf. Give that guy a quick 5 day stint in the pastures. By then, you should have enough manure for some great fertilizer. While that bacteria was evolvin, make sure you pick out the ferns and let those evolve second. Hopefully around the time you get your first cow, you'll have a few pumpkins to plant in that fertilizer

      @@Majin135 you can eat the ones for carving! They are great for soups. The sugar pumpkins which americans use are just more sweet. And since they over sweeten things anyway if you use condensed milk it should be good enough

    I grew pumpkins to make pumpkin pie and pumpkin rolls from scratch. I was recommended your cooking videos. I usually hate watching people cook (unless I'm there to eat what they just cooked), but this was not bad. I've never cooked from scratch 🤞

      Neither is pumpkin pie. They almost always use other squash. Not real pumpkin. Apparently there’s no difference but I don’t think so

      Depends on the pumpkin type you use, but generally I think true pumpkin pie is less sweet. Not sure if that is because of the type of squash (pumpkin is a swish) or whatever they add to canned stuff

    I made the pumpkin pie exact to the recipe except for store bought condensed milk and it was FANTASTIC tasting. Never buying store bought pumpkin pie again.
    Tips for anyone who makes this, when you are squeezing the pumpkin puree through the cheese cloth DO NOT stop until the liquid comes out drop by drop otherwise your pumpkin pie will still be more moist than expected.
    For those wondering how much usable pumpkin puree you are roughly going to get out of a small pumpkin sized similarly to what he used in the video it is about 40%. If your pumpkin weighs 1500g then you'll likely end up with around 600g usable puree after baking and squeezing the water out.

      I would also like to add that if you made your own caramelized milk, don't be afraid of quite a bit of bubbling and keep the temp at what he said give or take 5º Fahrenheit if you don't want an almost dulce de leche thing going on. 👍

    Fantastic recipe! Made this today now that fall is in full swing. This is how pumpkin pie is meant to be and categorically better than the canned pumpkin puree and condensed milk. No sugary after taste! Crisp, buttery, and flaky crust. (Thank you for the recommendation to bake first before pouring the custard filling). I will note don't forget to add vanilla (preferably high quality if possible!) It's in the recipe notes, but not in the video. Highly recommend making whipped cream w/heavy cream, sugar, and vanilla. Fresh nutmeg in the whipped cream and on top of the pie takes it to another level. I will say this all and all took about 3 hours to make as first attempt, but 100% well worth it. Thank you Joshua!!

    This is my go to crust! I have made it so many times and every time all my family and friends are so amazing at how good it taste! If you have extra crust I always make strawberry tarts! So delicious! Just take a circle shape (a mason jar works great)and cut out circle shapes. Then butter muffin tins and place the mini crusts in the muffin tins add a small dollop of strawberry jam and a sprinkle of coarse sugar. Bake for about 8 minutes and you will fall in love with these tasty tarts! Cool for a couple of minutes before taking a bite!

    Interesting additions to this recipe, as the time of year is nearing again:
    Add ~1 cup medium-chopped or crushed pecans to the filling.
    Add a banana to the filling (for real, you won't notice it in there, but once you did it, you'll notice it missing).
    Drizzle some caramel over it.
    Serve with ice cream.
    For Dutch people: add "speculaaskruiden" instead of manually mixing the spices.

    alright josh i tried this recipe last year and made 6 pies. then when I wanted to make more the pum[kins were gone 😭. so now as soon as my grocery store brought in the sugar pie pumpkins i went nuts. i made 10 pies already so far only ate 1 and gave out 8.
    seriously the secret here is the condensed milk. this year i made my own along with my own whipped cream and holy shit did it elevate it even higher. i will be making this til i die, seriously the best pumpkin pie i have tasted

      @@maryburrola3701 yes i did shield it since 1 hour in the oven is too much for a pie crust, (tested it and it burned) i made a shield from foil and loosely made it fit and it was perfect

    I made pumpkin pie from scratch when I was a teenager and it really was so much better than using the can or buying pie from the store (both of which remind me of baby food for some reason)! And it really wasn't difficult from what I remember, just took a little extra planning. Great video!
