  • Braised lamb shanks in a broth made from sauteed tomatoes, celery, onions and carrots with red wine plus herbs: bay leaves, rosemary, thyme.
    Before serving, the bay leaves and the herb stems should be removed.
    Total preparation time is about 4 hours, with 3 hours of that the final braising in a 300 degree Fahrenheit oven.
    You can double the lamb shanks and still easily do the pan sear an fit in the braising vessel. That gives you more lamb for the effort.

    That looks FANTASTIC. Lamb is definitely one of he harder proteins to cook properly. Great work, man!
