- Making espresso with cold water isn't something brand new, but a pump driven machine that's designed to brew it is. The Osma Pro is a new addition to the coffee market that uses vibration to assist in extraction without the use of hot water. So in this video I break down how it works, the coffee it brews, and my take on if it's an coffee innovation or a home barista novelty.

I happened to be one of the early adopters of this product and was one of the first to receive it. You're definitely right that it's very easy to under-extract and get offputtingly sour results. However, at its peak I've found an awesome depth of flavor, with virtually no bitterness clouding the result. In my experience it's best to pretty much go just slightly coarser than the point at which it chokes and pull a long ratio shot (somewhere between 1:3 to 1:4). Combined with a pre-soak of 10-15 seconds, it'll be frustrating slow - almost 2 minutes overall, which is annoying with such a loud device - but the results are definitely worth it IMO. I'll also say that the results are definitely best when pulled with room temperature water and served over ice. I'm happy to share any more experiences or help troubleshoot
Glad to hear you’re enjoying it. In the end, I tested a lot of different methods, long and short, coarse and fine, but extracting with cool or cold water just doesn’t bring out the flavors and textures I like.

I really like doing cold shots with my Cafelat Robot. They're obviously going to be small shots though and this lets you get more extraction.
The best thing about the Osma is the supercool rectilinear brutalist design.

Thank you for the review. I was pretty curious about this one. I would disagree with your statement regarding if cold-pressed espresso would catch on though. Espresso Martini variations are probably the most popular cocktail of 2020s and I can see a lot of bars investing into this kind of a machine once we get more commercial ones.
I see what you’re saying, but based on the recipes I’ve seen and bartenders I know they either want to be full on and learn how to pull traditional shots, or they are about productivity and use a cold brew concentrate. This just falls in the middle, and I find it much harder to get an espresso-like shot in less than 1-2 minutes (and that’s just brew time). So I will standby this being more of a seasonal or novelty deal.
Speaking as a Bartender, Manager, Sommelier and dare I say “Mixologist”, there is no way a bar with any semblance of a pre-existing coffee programme is going to invest in one of these to make cocktails with.
Whilst you might be able to do some interesting things, infusing drinks a la minute via the pump, I’d say more Operators would prefer to invest in draft cocktail systems to accurately and consistently put out drinks.
You’d never raise a purchase order for a toy like this.
Can I have to say you are wrong most bar tenders are like us coffee nerds (actually never met one) and too be honest the best espresso martini I’ve ever had is from a events guy that I don’t drink his coffee because he doesn’t pour a good enough shot. I think you are right in the fact if you had this in your (or my) house we would be able to make a espresso martini that the world has never seen but in a busy bar they are happen for good espresso not great espresso
I'm excited to see where Osma can take this tech with some refinement. I think it could do better as a bean to cup machine than traditional espresso, seeing as it would contain the mess well and work well with added perks such as build-in tank with refrigeration.

My Quick Mill Alexia Evo has a mode where the machine can be used (pump and all) without turning the heating element. Maybe I should try it to make room temperature espresso on ice... any suggestions for ratio and grind? For regular (hot) espresso I usually go for a 12 gram single in 1:2 ratio. Since cold and quick extraction is going to be weak I assume a larger basket and finer grind would be needed to compensate.
I've had mine for about a month now, and absolutely love it. I agree it can be a little finicky, but honestly no more so than anything espresso related. One of the greatest parts is how fast it is to use. Traditional espresso on my la Pavoni takes 20-30 minutes start to finish for everything to warm up/come to pressure (not to mention fighting thermal stability). The Osma is ready to go instantly. Fill a cup with fresh water, place your portafilter, and you've got a complete cup of coldbrew within a minute. Also, I disagree regarding price - I feel like the machine is incredibly high quality (the machining of the drop tray is remarkable) and it's incredibly innovative. It's well priced for a supplemental machine on the bar to increase your coffee options. I also use mine daily now, so I think that plays a role in the value proposition.
Comparing the Osma to La Pavoni is not really fair. One is utilizing latest tech, one is using one of the oldest espresso methods. A Breville espresso machine may be a better comparison in terms of convenience and build quality. the Breville Dual Boiler will be ready to go in 6-8 minutes and be rock solid stable temp wise, and has a timed start function for it to be ready when you are.
@@randyhou8522 fair, there is a bit of a technology/age gap between the La Pavoni and the Osma, but I'd argue that the price of the Osma is an even better value compared to a Breville. Even the dual boiler is an appliance, although nicer than many of their other products. The Osma is still miles ahead in terms quality and durability/user service ability.
How do you know when stop your recirculation cold brew ? Thx
I get great results brewing cold espresso with a kompresso. A very fine grind and long preinfusion gives best results.

Spro you ever try this with an espresso machine at startup before it heats up? I have 6-8 bar of pressure before I even turn my ECM Barista on. With needing a coarser grind anyway, I'm betting that's enough pressure to push through a puck without even turning on the ECM. I'll give it the old college try soon.
i"ve added a PID to my espresso machine and then you have way more control (depending on the machine you have ofcourse)
Hey, something I would be curious about: If you were to use it with hot water, shouldn't the added vibrations boost the extraction? Maybe that would be interesting to try out?
I know that's not exactly what the machine is built for, but I think it still could be a good way to use the given technology.
The vibration and recirculation technology is really cool but at the end of the day, cold-pressed espresso seems like a fad like charcoal coffee. I think you're better off buying a flair and making a cold-pressed espresso or iced americano at a much lower price.

Yeah I’ve made this on the flair, it isn’t as consistent in terms of extraction, the vibration does make a difference, but not sure it’s worth hundreds of dollars of a difference.
@@Sprometheus I love playing around that’s why I ended up going for the flair over the classic, Silvia, bianca or mini. And the fact that for the price I could pressure profiling made it a no brainer
I know you’re not a fan of americanos, but did you try a cold shot with hot water added? I can see that being an option for colder months.
I have a feeling that some company with plenty of capital will take this idea and make it great. Beefy. Quiet. Reliable. Finely tunable. Making excellent coffee.
But even then... what are the benefits of cold brewed coffee over hot brewed?
I am actually curious about this.

Thank you for another open review. The idea seemed very interesting right up until you mentioned the price. For a small company with a new product trying to effectively create a new market, I understand the need to re-coup initial cost but it would be ";pass" from me. Are there enough Creatives out there to purchase this first model and fund OSMA through to a cheaper second model ?

The problem for me is you can probably get very similar results using a PID kit Gaggia or other machine and simply turn off the heat. Then you get both in one machine
@@KnowledgePerformance7 doesn't work that way. It would never make the pressure without any heat.
@@veganpotterthevegan There's that, and I think at least half their pitch is over the extraction via vibration, which, of course, you wouldn't have from a traditional machine.

I love making room temp espressos with my flair. I don’t do it often, normally it’s an occasional summer drink. If I ever do it, I mix it with sparkling water and it’s quite the treat
Thank you for your honest review. I cannot see how spending this much money can be justified when a cold brew maker can be purchased from Amazon for as little as 20 dollars. It takes more work and takes a lot longer to make, but in the end, that is a lot of money saved.

I really believe that if startups would take the tesla approach - make the amazing supercar 1st, then slowly make lower cost models available as soon as possible - would leave a good taste in people's mouths and cause them to trust in the mechanism produced by the company. Then the demand rises fast along with the trust and nice lingering flavor.

For sth similar, you can get a flair older version, cheaper and I believe it does the same thing :)
considering that it is machined from 6061 aluminum, here in the US, not China, I don't think the price is high. I bought one.

It is, I have a video doing it from a couple years back.
If you're looking for a 20-40g shot of cold espresso then a flair is the way to go. If you want a complete cup of cold brew then you'll want the Osma.
So the pump just vibrates? I'll just go ahead and disconnect the boiler on my silvia then!
It’s a weird machine…. Seems to need some polishing…. Love the idea of a fast cold brew though!
Definitely a super unique machine, will be interested to see how it progresses over time and if they can really iron out the details without increasing the price.
Love the design but as everyone else said seems like it's got some issues.
My big question: why no internal tank? For the price a tank should be included in the machine and you should be able to switch between the two.
Probably to keep the machine simple, otherwise added complexity to make a recirculation feature.
One can argue you always have fresh water this way.

Maybe I'm just an old man yelling at clouds, but I really don't understand who the target demographic is. I thought one of the draws of cold brew is ease of preparation and ability to make big batches. This seems to do away with that. Also, in regards to brewing with recirculated coffee, what is cleaning like? Will the machine get yucky easily?
Yeah I get that for sure. In terms of cleaning I just flushed it with fresh water, but as another commenter said, I’m not sure what the long term downside is of recirculating coffee in a pump and if they will degrade or clog it over time.
Any idea what happened to this company? Their website goes nowhere and I can't find a way for a customer to get any sort of support.
My guess is they went defunct. I don’t think there was a wide enough interest in the product. They reached out to me about a year or so ago asking if I wanted to try newer version and I declined. And now when I search for their IG I can’t find anything.
How about brewing with hot water? Surely that could achieve the best of bith worlds?

I wanted one, but had a hard time justifying the cost. So I bought a Flair instead and figured out how to pull a satisfactory “cold” shot.
I hummed and hawed about lots of different machines gaggia classic, linea mini, Silvia and the flair. I ended up getting the flair and I have to say I would never go back (it does make a big difference I got a signature for £100). But the fact I can have a machine that can pressure profile and take up as little space in my kitchen along with doing other experiments along the way make it in my opinion that best machine on the market.

As someone who likes cold brew,
From the color I can tell this won't taste anything near true cold brew coffee.
I find it strange that the overall take on quality of construction is negative - the build quality and level of industrial design within this thing seems to surpass anything remotely close to its price. A lot of thought clearly went into the design and materials chosen; it is taking on a very minimal, high-end materials aesthetic similar to what is found in Option-O's products.
I based this on the slightly misaligned panels, odd matte, prone to smudging material, the drip tray with a tablespoon of space for drips, and lack of vibration absorbing insulation and base.
In terms of the look, unlike the Option-O which looks and feels very intentional and impeccably machined. This to me feels like a byproduct of keeping things simple to reduce time and costs if prototyping and manufacturing.

@@Sprometheus Well said. I feel the same even though I never tested it in real life. It seems new companies try to ride the "coll new products for specialty coffee ppl" waive and that is how we end up with products like this. Just the fact the straw is a quick connection tells a lot about their design decisions. Hopefully they can learn from that feedback and come up with a better version.

Just put a cup in the freezer and pull espresso into that - cold brew!
Asked a few questions on their Facebook page about how it was working and they banned me. Can’t say I have any respect for this company anymore. Very disappointed.
