@@JerenesEats thanks so much. Will try these. I added more peas last time and still - too runny. I’ll try more dumplings next time. How long do you normally allow the peas to simmer? They were in the pot for about 40 minutes yesterday 😅
Pig tails are very tricky. They take a long time to get soft, if you are not using a pressure cooker. Timing is everything with it. Once all the salt is removed the pig tails must boil on it's own for at least 45 minutes before adding beans, and the rest of the ingredients.
I never remove ALL the salt from the Pig's tail. I need some of that saltiness for flavour 😋 Kinda like boiling Saltfish, I try to leave some salt in the fish. I never boil it till its completely fresh. I complete the cooking of the pigs tail along with the peas so that they can flavour each other.
Add a pinch of ginger, folks. Just a pinch. It will settle the stomachs of those who get acid after eating beans (same with red peas and rice, or red peas soup). It imparts flavor, too.
The meat and peas can be BOILED but as mentioned at 5:33 the stew is simmered. Simmering is medium-low heat. Usually a stew is simmered and not boiled.

1.Maybe the peas need to simmer for longer to release more starch
2. Perhaps you need more dumplings
3. Maybe you need to reduce the liquid a bit more

You boil to remove some of the salt and discard the salty water. If you just use the pressure cooker, the meat will be cooked and still salty
You may boil THEN pressure cook❤

I have a few. Imusa I get on amazon or at Walmart. My heavier Dutch pots I get from Jamaica
Can I use canned kidney beans ?
