    Learnt this from a wholesale crab supplier in Singapore who supplies to restaurants.
    This video will show you how to prepare the crabs from the start till the end.
    First we need to soak in water for about an hour, remember to put ice in, to ensure that the crabs are put into deep sleep and not shocked to death. This will allow the crab muscles to slowly relax and the meat will not be too tough.
    Once they being put to sleep then it is time to clean it with a brush. This is a special kind of crabs, named Double Shell Crabs, and they have a lot of roe which is the specialty of the Teochew cuisine in many restaurants.
    Once they are cleaned, arrange them on a steaming plate together with some ginger slices and 2-3 tablespoons of wine and steam for around 20-30 minutes, depending on how big the crabs are.
    Once they are steamed, make sure they are fully cooled. This can take overnight or with a fan, few hours. Once they are fully cooled, wrap with a cling wrap and put into the fridge for enjoyment the next day.
