Here in Cleveland most of the time the fish are gutted before they get shipped to use. So we can not do the canoe cuts. Sometimes I do it on the bronzini for a few customers. They like the canoe cut the best.

he said "freshwater" and i'm thinking he's using water from a nearby waterbody. which has bacterias that otherwise don't exist out of a faucet. y'know--electrolytes. lol jk but for real, it could contaminate the flavor later. (i'm totally making the best guess i can. i had the same question)
You can't spray freshwater onto the meat it diminishes the quality of the meat. He has a video that shows a salt, ice, and water mixture that can be used to clean meat if needed.
I would take the first butterflied one, seasoned my special way and grilled on my Weber kettle grill to absolute perfection.
