    Butterfly bottom side in a pinch. Cool. Canoe. Aw man you could kill that presentation stuffed. I like Butterfly, but with some time and thought definitely would rock that Canoe.

    Nice video.Butterflying is how I prepare fish for smoking. I like the look when you split the head so I'll do that from now on. Also I always laugh when I watch the Asian videos of them cleaning bluefin and such and spraying hose water directly onto the meat. Nice job. Love watching your videos. Mahalo for sharing

    Here in Cleveland most of the time the fish are gutted before they get shipped to use. So we can not do the canoe cuts. Sometimes I do it on the bronzini for a few customers. They like the canoe cut the best.

      he said "freshwater" and i'm thinking he's using water from a nearby waterbody. which has bacterias that otherwise don't exist out of a faucet. y'know--electrolytes. lol jk but for real, it could contaminate the flavor later. (i'm totally making the best guess i can. i had the same question)

      You can't spray freshwater onto the meat it diminishes the quality of the meat. He has a video that shows a salt, ice, and water mixture that can be used to clean meat if needed.
