I think the amount of velocity a card gives you is also related to how many different abilities are in your deck. Phoenix seems like it would have a lot of velocity but all the cards do the same thing
I am loving the more philosophical questions. I could describe velocity as card "agility" or "nimbleness". You improve card quality rather than quantity. I have heard the metaphor of "filtering" your hand a lot as well, similar to your churning/thinning terminology.

Green is good at drawing cards, but that effect mostly is, and should be, stapled to creature synergies. P.S. Very well said about how Candy trail is great velocity for progressing through the beginning, middle, and late game stages! I hit mythic for the first time this season using mostly aggro decks, but I really enjoy mid range and I want to dip my toes further into control. I plan on making a 3 or 4 -color control deck and I am considering adding Candy trail to it, specifically because of this video
Yeah, Up the Beanstalk is very strong, I was trying to use cards in standard as examples. Augur of Autumn might have been a better example of a way green accelerates velocity (it can be card advantage too, it just doesn't have to be). Candy Trail should make a 3-, 4-, or 5-color control deck a lot more consistent, happy brewing.
