🌼 Jjimdak Korean Soy Braised Chicken
Ingredients
4 to 6 oz Dangmyeon, Korean glass noodles (made with mung bean or sweet potato)
one 3 lb bone-in and skin-on whole chicken, cut into 12 to 13 parts, including back
For the Sauce
1/2 cup soy sauce
1/4 cup fish sauce amzn.to/2RKLm1f
1/4 cup mirin amzn.to/2RGwpgz
1 tbsp dark soy sauce, optional amzn.to/3gMFvmz
1/2 cup sugar
1 tsp black pepper
5 to 10 dried chili, optional
15 to 20 cloves garlic, chopped (approximately 1/3 cup)
For Vegetables
8 oz carrot, peeled and cut into large chunks
8 oz sweet potato or regular potato, peeled and cut into large chunks
1 large onion, slice into 1” wide
2 daepa, Korean large green onions or 2 bundles of green onions, cut into 2” long pieces

This was one of the first meals I had in Korea and it’s my all time favorite. I love the carrots, the potatoes, everything and I will definitely be trying this recipe.
I lived about 40 minutes from Andong for a few years and this quickly became my favorite food. You couldn't literally get in any cab in the city and say Jjimdalk and they would take you to Jjimdalk road which is in the middle of their shopping district and every single restaurant on the street makes Jjimdalk. I think I tried half of them while I lived there.

I lived in Korea for a few years but now I am back home. I was having major jjimdak cravings so I made it today using this exact recipe and it was fantastic. I couldn’t get glass noodles though so I used rice noodles. I covered mine in mozzarella cheese. It was amazing. Thank you.

I’ve always been a fan, and it gets better every time! When my mom and I went to seoul, we tried having this dish. She wasn’t feeling very well then and was unable to eat much. so i promised making this for her as soon as i saw your video. But if i may ask, can i also use rice noodles? Just make it today for lunch..wow so good. I substitute the mungbean noodle with shirataki and i skip mirin and use sweet soya sauce instead. But still so good
