    RECIPE: CHOCOLATE HAZELNUT BISCOTTI
    1 1/4 cup all purpose flour (300ml)
    1/3 cup cocoa powder (80 ml)
    2 tsp. baking powder (10 ml)
    pinch salt
    grated zest of ½ orange
    1 cup sugar (250 ml)
    1/3 cup extra virgin olive oil (80ml)
    2 large eggs
    1 tsp. pure vanilla extract (5 ml)
    1 cup whole hazelnuts(250 ml)
    Instructions:
    Preheat oven to 325 degrees F.
    2. Line a large baking sheet with parchment.
    3. Sift flour, cocoa, baking powder, and salt into a medium bowl. Add hazelnuts.
    4. In another bowl, add orange zest, sugar, oil, eggs and vanilla extract. Whisk until smooth.
    5. Add the egg mixture to the flour mixture. Stir with wooden spoon and blend well.
    6. Divide dough in half and shape each into a cylinder (roughly 12 x 2-inches). Dough will be sticky so use a little oil on hands to shape dough. Arrange the cylinders on the baking sheet, leaving at least 3-inches - they will spread out as they bake.
    7. Bake for 25-30 minutes or until golden and firm. Remove from oven and let stand for 15 minutes before cutting to keep shape.
    8. With a large spatula carefully scrape cylinders off tray and transfer to a cutting board. Carefully slice crosswise on the diagonal with a serrated edge knife (in one full cut) into ½-inch slices.
    9. Put slices back onto the baking sheet, laying flat and not overlapping. Bake a second time (again at 325 degrees F.) for 20 more minutes or until golden brown and crisp.
    Makes about 40 biscotti

    I made biscotti yesterday using your recipe. Delicious! I was a little hesitant to use olive oil, thinking it may taste too strong, but no olive oil taste at all.
    Also, not at all dry as another viewer claimed. Absolutely perfect biscotti! Thank you for the recipe and accompanying wonderful tutorial.

      HI Cathy. I have not made them nistisima ( plant based ) but I would definitely try the following: just replace the eggs with some aquafaba - the liquid in a can of chickpeas. With only 2 eggs in this recipe, I would try 1/4 cup of aquafaba. I imagine the texture will be more dense but it should work. I hope you try it.

    Can I add dried cherries or apricots or will that soften the cookie

      You can absolutely add dried cherries or apricots. Just make sure apricots are chopped . They will dry out in the second baking of the biscotti and become quite chewy. I hope this helps

      Thanks for watching and my apologies for the late response. Although I have never tried it, I'm pretty sure this option will work for these biscotti. For every egg , substitute 2 Tbsp. chickpea cooking liquid. It is also known as aquafaba. I hope this helps. Just do a search on aquafaba to see exactly what it is . Thank you.       My apologies for the late response. I really wanted to give you a great egg alternative. Although I have never tried it, I am pretty sure this option will work for these biscotti, as they are a very rustic cookie. For every egg, substitute 2 Tbsp. chickpea cooking liquid. It is also known as aquafaba ( when you open a can of chickpeas, that liquid inside is what I'm referring to ) . I hope this helps and you can give it a try. Perhaps you can research the aquafaba a bit further to make sure you use it properly.

    Utter garbage. Followed the recipe to a tee, yet the dough turned out very dry. Had to add a splash of milk just to keep it together. And although the logs had baked alright, they crumbled and fell apart when I started cutting. I’ve never had such a disappointing experience with biscotti before.

      I am sorry to hear that you had problems with the biscotti although I'm sure there is some reason for it. This recipe is one I have used for many years and everyone loves it. The dough should actually be sticky. Did you use a dry measure to measure the flour and cocoa and use the scoop and flatten method ( not packing ). Did you use large eggs and the olive oil ? There is no need for milk, especially since there is no milk in the recipe. You saw in the video how loose the mixture is. I had someone comment just the other day how great they were. I hope this helps and that I could trouble shoot perhaps were you went wrong.

      MyFavouriteFoods ChristineCushing thank you for the quick response (did not expect that)! I always try to be very precise with measurements and use a trustworthy calibrated kitchen scale for baking. I specified that I had to add a tablespoon of milk just to bring the dough together, even though the recipe didn’t call for it. Anyway, I apologize for leaving such a harsh comment. Eventually I made a caramel bread pudding with the crumbled biscotti and it turned out delicious.
