Egg Fried Rice
1 large spring onion sliced
2 Fresno chilis diced
3 large cloves of garlic
3 tbsp peanut oil
2 tbsp beef fat
3 large eggs
4 cups cold, cooked rice
4 tbsp soy sauce
1 1/2 tsp sesame oil
1 1/2 tsp white pepper
1 tsp MSG
spring onion tops for garnish

The darker, more delicate green parts were used for fresh garnish.
White part is ok, it's common in Asian food to put aroma, the green one is the one you can't cuz it will wilting.

Usually the whiter oniony parts are used to create a fragrant oil (green onion oil). Typically it's better to put it in before the oil gets too hot so that the fragrance comes out more, but not as bad in high heat if using a proper wok. Butter is not traditionally but also flavorful I suppose.

just FYI that was a frozen Beef fat cube I used in place of oil in the beginning, not butter lol, also I start with the white part of the green onions and use the green tops to garnish the rice in the end.

for either of them, if you consume them at moderate amounts, you'll mostly be fine.
MSG has also been found to reduce sodium content. And a ton of chefs agree it tastes better than salt

It is not a seasoning, it’s a chemical that tells your brain that this taste good. Like aspertame, is a chemical that tells your brain it’s sweet when it’s not natural sweet. I guess you won’t die from it, but no, there’s nothing natural about it and if you can leave it out of your diet, you should.

I like to drop the eggs in 2 steps:
First to have it as little chunks which will get mixed with the rice
And second to add the rice while it's still liquid, so it coats the grains.
Like to do the same with onions, garlic and scallions.
Anytime I want the crispy version and the rawer and fresher version in one dish, I add the ingredient in two steps and have the best of both worlds in flavor and texture.
He even did sauce onto the side of the pan instead of directly onto the rice. Beautiful.

Don't use sliced garlic and chilis, crush them along with shrimp paste or dried shrimps and candlenut using mortar and pestle til they turn into paste. This will make your fried rice more flavorful than ever.

Don't start off with green onion; save that for garnish! Use the white part only, or diced white or yellow onion, and saute it with vegetables (I like peas, carrots and corn) until they're slightly softened. The rest of the recipe is fine.
