Egg Fried Rice Recipe:
5 large spring onion sliced
2 Fresno chilis diced
5 cloves of garlic
3-4 tbsp peanut or avocado oil
2 tbsp beef fat
4 large eggs
8 oz ground pork or beef (optional)
4 cups cold, cooked rice
4 tbsp soy sauce
1 1/2 tsp sesame oil
1 1/2 tsp white pepper
1 tsp MSG

if you don't like MSG you could use mushrooms or even a teaspoon of Marmite you won';t taste such a small amount but it will give the dish a feeling of fullness

Mix an egg into your rice with your fingers before frying it. That lubes it up real nice and keeps it from clumping together.

Fried rice and omelettes are my go-to dishes for using up leftovers. I grew up not knowing what the original meal was, since we always ate the leftovers. When I heard there were people who would not eat leftovers, I was confronted with issues of morality, economics, better-the-next-day, and accommodation of my own laziness.

Forgot oyster sauce. Elevates the flavor 100 fold.
Tip, remove the burner grate when using a wok. Wok will be much closer to the flame and allow the flame to wrap further around the wok.
Instead of MSG, you could use chicken powder aka chicken bouillon. Another addition I highly recommend is garlic butter. I saw a Japanese place use it ages ago and have never been able to eat it any other way after that.
We substitute raw cane sugar and a little salt for MSG. Not quite the same but it’s pretty similar.

I've found a technic to get old rice faster, but it involves some equipment .. my induction stove has a setting that keeps temperature constant.. I set it to 60°C and let the rice dry a little for like an hour

You can use Takii Umami Powder if you don't want to use MSG.
It’s hard to mess up fried rice. I use my rice cooker or an Instant Pot to cook my rice with some kind of broth, chopped onion, chopped celery, about a 1/2-3/4 cup of frozen mixed veggies, and sesame oil.
Then, when I cook my scrambled eggs add the rice, and add low sodium soy sauce and some oyster sauce.
Don’t forget to add garlic at some point.

I find that it's not day-old rice that is the key. It's just if the rice is cool. Warm fresh rice still has lots of moisture which makes it mushy. But cool dry rice works fine. I do it all the time. Make fresh rice let it cool and some of the moisture evaporates and ur good.

@ThatDudeCanCook. You are only supposed to use the green onion for garnish not cook it in the rice, I know this because I watched a video of Uncle Roger reviewing Jamie Oliver who did the same thing and he said it was wrong.

Budders once cooked at a Thai restaurant, with over 50,000 or more BTUs with the wok cooker. It was a must that all mise en place was in place before cooking, as it would take right about one minute of total cook time to create the most spectacular fried rice dish ever. It would take about one minute to select the mise en place, and another minute to cook. But this is a recipe for cooks at home, so props for the very good recipe.
