- 5. Welcome to Bonita's Kitchen! Today we will be making Pickled Onions, made with yellow onions and red peppers, so tasty.....See recipe below!

Ingredients:
4 large Onions ( thinly sliced )
1½ cups White vinegar
1 cup Water
½ tsp Sea salt
3 tbsp White sugar
1 tbsp Pickling spice, and bay leaves
1 Red pepper ( chopped )
Pickling spice is whole black peppercorns, whole mustard seeds, whole cloves, and bay leaves.
Method:
1. In a medium saucepan add onions, red peppers, vinegar, sea salt, sugar, pickling spice and bay leaves in cheese cloth, and water then bring to a boil for 20 minutes or until tender.
2. Remove from heat have your mason jars cleaned and ready to use.
3. Start filling your mason jars cleaning the tops to remove any sauce then place lids and rims until tight.
4. Sterilizing and Canning Procedures
5. Sterilization:
1. Start by getting a large boiler and filling in about quarter full of water.
2. Then starting the water to a boil and placing your Mason jars inside then cover.
3. After let the pot boil for about 15-20 then remove your bottles and place them on paper towels or a cloth.
Canning Procedures:
1. After your food items are cooked and ready to bottle, scoop hot liquid and put inside your Mason jars.
2. Continue doing this until all bottles are complete and leaving 1/2 inch on top.
3. Clean around the top of your bottles removing any food of rims.
4. Then place caps and lids on your jars and tighten.
5. Then place your jars back in hot water bath and start the boil for another 5 minutes with the cover on boiler.
6. Let onion pickles go to room temperature then check each lid to see if they are sealed, if so store in cool storage, if not store in fridge until all eaten.
7. Serve with burgers, Jiggs dinner or boiled dinner, sandwiches or what you like.

Thanks for this! I took the juice from a jar of regular dill pickles and refilled the jar with onions and they're amazing but I'd like to learn how to make real pickled onions from scratch.
That is wonderful, its a good way of doing it but its nice to make your own. This is a easy recipe to follow and you can use pearl baby onions as well if you have access to them. Have a lovely day :) Bonita
After being on earth for 62 years I just now realized Newfoundland means new found land. Who is credited with discovering Newfoundland? I know there were indigenous peoples there, but some European got the credit. Great video, well presented and makes me want to make some but.............................. I would choose to use whole pearl onions. They already sell those in the stores but hopefully these would be better.

There were Portuguese fishermen fishing off Newfoundland in the late 1400s and early 1500s just a few years after Columbus discovered America. Some believe they were coming before Columbus but have not found definite proof. First British colony established in 1610 although the British had visited plenty of times before, this was the first permanent settlement.

I once tried this before with one part water and two parts vinegar, I was not sure about the storage period and after consuming only a little I threw them away. but the taste was great.
Cookingclinic thank you for message me back, I have been bottling pickles and beets for years and the key to proper sealing is to have your bottles and lids freshly cleaned and warm, when putting the liquid in the jars you need to clean around the rims so all liquid have been removed from the top. Then place the lids and caps on tight and if the pickles or beets inside is not pipping hot they are not going to seal properly, then you will need to give them a steam bath in a boiler of hot water for five minutes or so. After removing them from the boiler, When the mason jars go to room temperature you will start to hear popping sounds this is your bottles starting to seal, then after they are sealed you need to check each one to make sure they are sealed by removing the caps and putting your finger under the lid slightly and if they don't pop off they are sealed, if they do you must keep them in the fridge. We buy onions in huge 20 lb. bags in the fall and put in a cold basement during the winter. Some try to sprout. This recipe will really help me. They look beautiful.

This looks wonderful, I'll be making some soon. In the video you mentioned a cup and a half of vinegar and the printed recipe mentions a cup- does it matter? I like vinegar so I'd go with the greater amount if I can.

I am a lobster fisherman here on PEI and hated eating herring.... but one day a friend of mine robbed 2 bottles of pickled herring from his dads stash and my god they were awesome......It might be a video idea for you sometime Bonita

Can yoû add pickled beets and tomato chow to your list? Love the channel! My father used to use pickling vinegar which is a bit stronger I think...not sure if that would make a difference.

Hi Jack: Thank you so much for stopping by, if they are sealed they will last until you eat them all, I have pickles from two years ago that is not opened. But when you open them about a month in the bottle to stay fresh. I hope this helps and enjoy to the fullest. :) Bonita
Pickling spice? Is this the same as pickling salt? I have bay leaves but what are the other spices? Love trying your recipes...born and raised in Newfoundland and now reside in Ontario..looking forward to seeing your cook book under my tree this year!

Craig Smith thank you for your message and for visiting my channel, when you go to the grocery store ask the sales person if they carry pickling spice,, it's a mixture of different spices, peppercorns, bay leaves. It got no salt in the mixture and pickling salt is all salt. This recipe is super easy to make but taste so good on hamburgers, chicken burgers or just on the side with Jiggs dinner. Hi and thank you for your message and for stopping by, there are so many tutorials on pickling onions online. There are quick pickling, long term pickling and one month pickling. This recipe I have there is a long term pickling that can last if bottled properly for a year or more. The pickling you are looking for is a quick pickling and will last for one or two weeks in the fridge. So for sure make the vinegar broth and pour over the raw onions and refrigerate and enjoy. I don’t know if anyone’s noticed, but she says one cup of water. But she’s using a 1 quart measuring cup and it looks like she filled it half full of water and then one and a half cups of vinegar and it looked like there was even more.
Hi Scott, Thank you for your message and for stopping by, I'm not sure what you mean by she's using a 1 quart measuring cup, that would be 4 US cups? --------"This was a 2 cup measuring cup and I used one cup water and one and half cups of white vinegar." --------My recipe is also posted below the video.
