My name is Sam and I am from the beautiful Caribbean island of Saint Vincent and the Grenadines. Food is my hobby, Caribbean and Vincentian. This is my culture and this is where I bring it to you. Light Cherry Cake
Recipe
4oz unsalted butter (room temperature)
1/2 cups granulated sugar
2 eggs (room temperature)
1/2 of a lime rind
1 teaspoon vanilla extract
3/4 cups of all-purpose flour sifted
1 teaspoon baking powder
3 tablespoon maraschino liquid (use milk or juice if you prefer)
10 maraschino cherries and 10 green cherries - more cherries if you prefer. Cut cherries to your likeness.
Method
Cream butter and sugar until smooth and creamy
Add eggs one by one
Stir in lime rind and vanilla extract
Use a spatula to fold in sifted flour and baking powder in parts until combined. Do not overmix!
Crease and floured baking pan well.
Bake in preheated oven at 350 degrees for 45 minutes.

@positivevibes-Nat go a little easy on the vinegar. My hands were heavy on it, and you do not have to use it if you want. But it was delicious but a little strong with too much vinegar.

What are the measurements for ingredients

I have a question 🙋🏽♀️ how is it that your friend sent you the leaves from NY when those leaves don’t grow in NY? She must have gotten them from another country! Nothing grows in cold New York 🥶
@anandazen30 Do you know they import goods from another country? For example, there is sunset rum in New York selling, and the factory is in Saint Vincent and the Grenadines.
@ yes I understand what you’re saying but it doesn’t make any sense that people send stuff to New York then send it back to the islands. It’s confusing unless these vegetables don’t grow in your country/ island ☀️
@anandazen30 no! She shipped it from New York to Washington DC for me, where I live. They do not sell it here in DC. I am not home in St.Vincent.

Instead of water add fresh coconut milk you will get a better result I also like to add fresh ginger

Sam, I just finished making my bread. Mine didn't rise twice the size at all. I ended up putting them in the warm oven. Nothing. Then I just decided to go ahead and bake them to see what happens.. I wish i could show you. They are not as big as yours even though I followed the recipe. And I know its just me because everyone else is saying theirs came out perfect. Its winter here, and my kitchen is cooooold. Could that be why? But all in all...I will make it again and again until I get it right. Thank you, Sam😊😊😊😊😊
@yaayaa4955 Oh yes! The kitchen is too cold and I didn't leave this bread to rise long, only 5 minutes. But you can leave them to rise longer if you want. Keep trying and make sure your dough is knead soft.

@yaayaa4955 Yes, 5 minutes after rolling them out and 1 hour rest after kneading it. I hope you get through. Breadmaking can be something for some people, but don't give up.

How do you know the exact amount of water to use?
@yaayaa4955 seems like I poured a cup or over a cup of water. You can pour little water at a time and use a spoon to bring the dough together and knead with your hands. If the dough is too dry, add more water. If too sticky, add more flour. Remember, your dough should be soft for this bread. You will get it!
