Mike for the insulation look into spray foaming the roof. You can do it yourself and I’ve done it in my garage and it has made all of the difference stays under 85 even on high 90 degree days in the garage with no AC and I’m in Naples Florida. Fiberglass is pretty good but works better for shielding cold rather than preventing heat.

I’m sure now that it’s built he will park two of his cars in there to understand how to get it all laid out to be effective with ease of access and cost.
This looks sick! Just a heads-up, I would personally save up and do a mini split over a window A/C unit. Window units have to have the gaskets/seals between them and the window, which can leak and make it hot in the shop. Mini splits don't have that problem and are way quieter and more energy efficient than a window unit.
Also for the floor, consider doing an expoxy floor/coating as well. You can either have someone professionally do it, or you can buy DIY epoxy kits (the better choice for content IMO, lol), either solid colors or some that have decorative flakes in them to spice the look up a bit, lol. I think they look sick and they're really durable and spill/stain resistant, as it's essentially just a resin coating on top of the concrete.
Instead of a window mount A/C you could install a DIY Mini Split A/C - Heat pump like Taylor Ray did for his metal building. They’re more efficient and it will let you keep your window

8ft doors was the way to go … never know if you have a truck you need to get in there it would suck if it didn’t fit … I have a lifted jeep and one of my specs on a house was 8ft doors my realtor said she never had that request … because my Jeep wouldn’t fit in 7ft lol 😆… I ended up with a 40x80 building with a 13ft front door and 2 10x12 rear doors 😂
