      Handvo is bit different from this preparation. This is rice and urdal only, handvo is mix of Channa dal, tuvar dal, rice and bit of uradal.

      On the name of modernization the definition of hygiene has changed. I met a german who said eew India is so unhygenic, the coconut water here , the person uses just one knife type of thing to slit it open and he keeps it there and uses it again. It's as if , you cut a vegetable in a 5 star restaurant and keep cleaning it for every vegetable. These people are beyond our comprehension.
      Yeah right , they eat such hygenic food ! Bottled coke filled with hundreds of preservatives and water when stored for a long time develops moss, to prevent moss from appearing they add very harmful preservatives and sell stale water mixed with chemicals ! That's pure hygiene for you !!! Coke is so acidic it can clean toilets, and plastic gets dissolved when coke is stored in it, so we are actually drinking part of plastic !! Such garbage is deemed as top most hygiene and these people preaching about hygiene will drink it without second thought !
      When you eat maida which is present in every biscuit in the form of refined wheat flour , even in digestive biscuits it contains 50% maida , it's infused with hydrogen gases to prevent worms forming in the flour ... making it extremely unhealthy. Foods stripped of the top layer of the grain to great extents when they reach intenstines they stick to intenstinal walls and develop worms there ! Natural flour develops worms if stored for more than 3 months, so to prevent it, these people use maida ! Cakes, all bakery items like puffs, pastries, biscuits , maggi etc all are made with this maida ! These things are extremely hygienic and very healthy you know !
      Wearing plastic gloves which contain harmful chemicals ( see link because you won't believe unless western people say it - www.ecocenter.org/healthy-stuff/gloves-2019 ) is more healthier than someone handling food with clean hands ! Bunch of nonsense !
      Even in temples , pulihora ( tamarind rice ) is mixed with hand, this is because our hand contains all 5 elements like water, air , fire etc ... people who practice mudras know this ( people google about mudras for various health issues ) .
      Using hands is anytime 10000000% safer and healthier and hygienic than using gloves which contain toxic chemicals and when they mix with food, we get unhealthy as well ! So please wake up ! Not everything that is western is a good concept !
      We hail from a civilization of great food science, we have 6 tastes in food unlike west where you have just salt, pepper, sweet !
      Respect our culture and traditional foods without passing comments like these ! If the person has washed his hands then there's absolutely no reason why he should wear toxic gloves and contaminate food on the name of western concept of hygiene - which is contaminating food with chemicals !

      What you say is correct.Out hands are way more clean than .any utensil .but I have seen people sneezing and wiping nose with lungis .That is not personable.

      @@rinaghosh5385 They sneeze with end of lungi ( It won't touch their hand ) and wash hands after that, it's really none of our business as long as their hands are clean. If they are doing it with unclean hands, as a customer, we have every right to hold that person responsible.
      In my experience, I didn't meet one person in an Indian fast food joint , who handles food with unclean hands. Jai Hind.

      It's made of urad dal and rice. Overnight fermented Idli batter.
      They put water in the glass because when we close the lid, the water builds the steam inside that helps not to burn the bottom and cook through. It come out one side is crispy and otherside is soft fluffy
      Always best serve/eat with Sugarcane Syrup.
      Remember they cook on slow flame.

      The man is dramatising by making a hole in middle like Medhu wada to show people ....nothing in glass....he has dipped glass in oil and pressing n centre ....there's no meaning to this hole ??? He wants to make a scene of his own so making a hole...the roti atta may have content of baking soda hence become big like bun ....seems to be of maida...!?!

      @@crackernut410 you clearly don't know anything about cooking the recipe. They put water in the glass because when we close the lid , the water also boils and the steam that builds inside helps in cooking process. There's oil added and this water helps in building the steam inside. It's like roasting it one one side and steaming on the other side.
      The hole is made because usually the center part of the dibba rotti burns due to over heat , the hole will prevent that and also the steam from the glass helps in cooking process. Normally it's flipped to the other side but oil won't be added again to fry, but these people skipped it.
      It's not made of maida FYI , it's a recipe that's over 400 years old or even ancient than that ( mentioned in Srinadha kavi sarvabhouma's literary works ). It's made of urad dal and rice. Also baking soda will not be added. Just like idly becomes fluffy this dibba rotti also becomes fluffy due to the steam buildup in the water kept in glass.
      It's not made of maida like bread, hence it's very nutritious and healthy. It's usually eaten with tene panakam . When sugarcane is boiled before turning to jaggery that liquid is collected and it's called tene panakam. If we can't find that , normally people use jaggery syrup as combination as it helps to digest this faster.

      that's why this texture is different...grind soaked urad dal ( soaked for 6 to 8 hours ) first and later add rice ravva ( coarsely ground rice ) ferment this together over night in a place where there's maximum heat in house ( with lid closed ) till you see increase in quantity of batter ( you can see this mixture becomes double in quantity than when ground ) ...
      Now dibba rotti batter is ready...

      Yes glass of water kept cooks the other side but still it has to flipped and cooked again because the steam may not be enough. It should be flipped to the other side until it has slightly roasted texture ( keeping it for long may burn the dish ).

      yeh urad dal aur rice se banta hai...gehu ke atta se nahi , toh aap isko aapki roti mat samajhiyega.
      yaha pe satya jee jo kaha hai woh wakai sach hai, iska taste motapan mein hi hai...aur dusre tarah flip karke cook karna chahiye joh is hotel walon ne nahi kiya, gharon mein doosre taraf bhi hum ( telugu log ) cook karte hai ... toh poora pakne ki chinta nahi hoti...

      On the name of modernization the definition of hygiene has changed. I met a german who said eew India is so unhygenic, the coconut water here , the person uses just one knife type of thing to slit it open and he keeps it there and uses it again. It's as if , you cut a vegetable in a 5 star restaurant and keep cleaning it for every vegetable. These people are beyond our comprehension.

      They put water in the glass because when we close the lid , the water also boils and the steam that builds inside helps in cooking process. There's oil added in the bottom and due to heat this boiled water helps in building the steam inside. It's like roasting it one one side and steaming on the other side.
      The hole is made because usually the center part of the dibba rotti burns due to over heat , the hole will prevent that and also the steam from the glass helps in cooking process. Normally it's flipped to the other side but oil won't be added again to fry, but these people skipped it.
      It's not made of maida FYI , it's a recipe that's over 400 years old or even ancient than that ( mentioned in Srinadha kavi sarvabhouma's literary works ). It's made of urad dal and rice. Also baking soda will not be added. Just like idly becomes fluffy this dibba rotti also becomes fluffy due to the steam buildup in the water kept in glass.
      It's not made of maida like bread, hence it's very nutritious and healthy. It's usually eaten with tene panakam . When sugarcane is boiled before turning to jaggery that liquid is collected and it's called tene panakam. If we can't find that , normally people use jaggery syrup as combination as it helps to digest this faster.
