15g red bean curd (fermented)南乳
10g bean sauce 面豉酱
15g chu/chee hou sauce 柱候酱

8g five-spice powder 五香粉
10g salt 盐
10g sugar 糖
15g cooking wine 玫瑰露/米酒

B) Vinegar Mixture 醋水
10g red vinegar 红醋
30g white vinegar白醋
6g maltose/honey 麦芽糖
10g cooking wine 米酒
C) Flour Paste 粉浆
1 tbsp flour 茶匙面粉(15g)
1 tsp corn starch 玉米淀粉(5g)
1/2 tsp baking soda 苏打粉(2g)
1 egg white 蛋白
1 tbsp water 水(15g)
(The duck's belly facing upwards) Bake at 360F for 45 min 鸭肚朝上180C烤45分钟
(The duck's belly facing downwards) Bake for another 20 min 鸭背朝上再烤20分钟
