    as a nurse, I’m well aware that doctors used to perform surgery on newborns without anesthesia, proclaiming that the baby couldn’t feel or process pain. Thank God we’ve evolved past that barbaric point.

    All the people say "rigor mortis". Two facts I just checked:
    1. Fish do not die immediately after their spine is cut. Although the lower-level neural reflex arcs can still work after the higher-level brain activity has stopped, causing muscle spasms and twitches, research on when the brain stops processing pain signals is insufficient, and no one can explain whether fish can feel pain when they twitch.
    2. Fish can feel pain, and their pain-receptor cells do not need to transmit signals to the brain through the spine. The fish's nervous system can directly transmit pain signals from the receptors to the brain, triggering corresponding behavioral responses, so cutting the spine cannot block the fish from feeling pain.
    All I can say is that I can't be sure that the fish was dead when it was skinned, nor can I be sure that it didn't feel pain.
    Why not wait a little longer? 10 minutes doesn't make the fish less fresh, but it does save the cook time. Or is it for those who would enjoy watching the skinning of a twitching animal?

      @@user-Cukish-S-maslom I have only seen tigers in zoos, I have never seen a wild predator that could threaten me, and I don't expect to see one in the future. Tigers don't have moral values, at least we don't know they have them, but humans do.
      If the peeling process is not shown to me and the dish is served directly, I will eat it without any pressure and even enjoy the fresh taste. But if the cruelty of the process is shown to me, the hypocritical me will start to criticize it. After all, hypocrisy is part of human nature as well.

      @@qianyiwang47 Я вырос в СССР, в те времена мои родители держали подворье, я вырос с тем что что бы съесть курицу или кролика - сначала их нужно убить. То же самое со свиньями и коровами. Рыбы - ну мне больше жаль лобстеров, тех вообще японцы подают с шевелящимися головами... Не думай о плохом. 😁

      @@user-Cukish-S-maslom I have always lived in the city, but when I was a child there were still small poor courtyards house around the city. Once I saw my neighbors killing a pig, and the pig screamed miserably. The reason was that a group of amateurs did not have good skills and took a long time to kill it. The people around did not like the pig's screaming and thought it should be killed the faster the better. There was no moral thinking I believe, at that time people around normally don't have much education background, just intuitively felt it would be better to do so.
      I thought I had forgotten the pig's screams, but apparently I can still hear it.

      @@qianyiwang47 Люди тысячелетиями питались животными убивая их, не нужно думать что курица росла на дереве, её сорвали, упаковали и положили на прилавок. Мы люди - по сути плотоядные хищники и гидропоникой никогда питаться не будем. Всю эту блажь про животных придумали зелёные, точнее повестку им задали глобалисты и у этого есть одна цель - уровнять скот и людей. Подумай над этим.

    I know everyone in the comments is joking around- but the fish really is dead. It’s muscles are just repeating what they’ve done the entire fishes life- try to push through water. See how it doesn’t look like it’s struggling to breathe? Because it’s just the muscles doing what they do :)

      As a veterinarian the fish was still alive and conscious from what I've seen. The do the same thing to rabbits, cats and dogs which is horrifying as they scream and kept alive for sale.

    Please cook Fish Head Soup to avoid wastage. I recall in Malaysia it is very common to have Fish Head Soup.

    Seems cruel but better than eating dogs. Also, the chef doesn’t seem as skilled as some others on UA-cam. Doesn’t seem as precise. Even the wasabi leaf looks messy. Maybe not used to being filmed.

    Such a beautiful fish. Expert cutting by the Sushi Chef. The Moray Eel is star of the show. Although I love this Channel for its cooking, these are really magnificent creatures of our world. Not to be eaten but admired. I will stick to Fried Chicken and Slow Roasted Duck...

    If he intended to eventually skin the fish like he did, why didn't he just do it at first instead of cutting off the scales in little strips? Also aren't amberjack inclined to have worms? 🤔

      All fish are going to have some kind of parasites or worms. Especially as they get older. Almost any meat you eat has them. That's why we have stomach acid. There are only certain types that can survive and become a problem. The main issue with amberjack is it's just simply not a very tasty fish. It's extremely bloody. They're fun to catch but we call them sea donkeys here in Florida lol

      @904theheat yeah I understand that, I was looking closely at the one that they were cleaning and I did not see any worms. I was wondering if the Japanese versions don't have them. I was also wondering about cutting small strips of the scales off and then skinny it later I think that I could do it with my rapala play knife from the get-go. 🤔 By the way I love sashimi my favorite that I've tried so far is Cobia and trust me I've eaten a boatload of it. 👍

    Amberjack…. I will not eat sushi made with hamburger jack unless I know what part of the jack it came from. And it comes from close to the head maybe. I’ve cleaned too many amberjack. I know too much. It has to be cooked… its worms are harmless, but really I prefer it cooked. It’s a nice size amberjack, it doesn’t look like it has worms….yet. The larger ones are better, barbecued or smoked. Can’t imagine what it would be like as sushi. Well I get to Japan, I trust the sushi chef’s there to know amberjack…. It will be interesting. Can’t think of the name of those flowers, but they’re kind of a stringent in flavor I think…. A tiny bit of bitterness…. It’s been a long time since I’ve eaten one. In the USA we don’t eat flowers…. We don’t eat an awful lot of good stuff.

      Smaller, non tropical jacks are fine to eat. Jacks with worms mainly are close to the tropics.
      I've caught many out of Galveston at the Tequila rigs up to 100 lbs. with out worms.

    Some muscles may, yes, but the lungs don't typically keep working once the fish is dead. This is a poor way of killing a fish. It still has some of it's brain functions intact because of a bad cut.

    As a current fire chief (25 yrs in so far ) yes, the fish is dead. Those are just reflexes. I've seen traumatic crush injuries in people where the same happened also pets that get euthanized
