The fish's nervous system can directly transmit pain signals from the receptors to the brain, triggering corresponding behavioral responses, so cutting the spine cannot block the fish from feeling pain. All I can say is that I can't be sure that the fish was dead when it was skinned, nor can I be sure that it didn't feel pain. Why not wait a little longer? 10 minutes doesn't make the fish less fresh, but it does save the cook time. Or is it for those who would enjoy watching the skinning of a twitching animal?

Tigers don't have moral values, at least we don't know they have them, but humans do. If the peeling process is not shown to me and the dish is served directly, I will eat it without any pressure and even enjoy the fresh taste. But if the cruelty of the process is shown to me, the hypocritical me will start to criticize it. After all, hypocrisy is part of human nature as well.

Once I saw my neighbors killing a pig, and the pig screamed miserably. The reason was that a group of amateurs did not have good skills and took a long time to kill it. The people around did not like the pig's screaming and thought it should be killed the faster the better. There was no moral thinking I believe, at that time people around normally don't have much education background, just intuitively felt it would be better to do so. I thought I had forgotten the pig's screams, but apparently I can still hear it.

As a veterinarian the fish was still alive and conscious from what I've seen. The do the same thing to rabbits, cats and dogs which is horrifying as they scream and kept alive for sale.

All fish are going to have some kind of parasites or worms. Especially as they get older. Almost any meat you eat has them. That's why we have stomach acid. There are only certain types that can survive and become a problem. The main issue with amberjack is it's just simply not a very tasty fish. It's extremely bloody. They're fun to catch but we call them sea donkeys here in Florida lol

Amberjack…. I will not eat sushi made with hamburger jack unless I know what part of the jack it came from. And it comes from close to the head maybe. I’ve cleaned too many amberjack. I know too much. It has to be cooked… its worms are harmless, but really I prefer it cooked. It’s a nice size amberjack, it doesn’t look like it has worms….yet. The larger ones are better, barbecued or smoked. Can’t imagine what it would be like as sushi. Well I get to Japan, I trust the sushi chef’s there to know amberjack…. It will be interesting. Can’t think of the name of those flowers, but they’re kind of a stringent in flavor I think…. A tiny bit of bitterness…. It’s been a long time since I’ve eaten one. In the USA we don’t eat flowers…. We don’t eat an awful lot of good stuff.
Smaller, non tropical jacks are fine to eat. Jacks with worms mainly are close to the tropics. I've caught many out of Galveston at the Tequila rigs up to 100 lbs. with out worms.
Some muscles may, yes, but the lungs don't typically keep working once the fish is dead. This is a poor way of killing a fish. It still has some of it's brain functions intact because of a bad cut.

As a current fire chief (25 yrs in so far ) yes, the fish is dead. Those are just reflexes. I've seen traumatic crush injuries in people where the same happened also pets that get euthanized
