Hey man, around 1:58 you said we Brazilians would be sad that you said the Brazilian republic is dishonorable, but every single Brazilian thinks that. In all political parties people love Dom Pedro II with all our hearts, he was a real progressist in the time, hated slavery and believed that his people should pay as little taxes as possible.
I wouldn't call him universally loved, but even those that feel he's seen in an over-idealized manner today do agree the proclamation was partially a disgraceful aristocratic tantrum (a self-harming one, even) and the First Republic ended up being bad enough to be universally despised to this day. That's also probably part of the reason both him and Vargas are still so well-liked.

To win the early wars: 1) Set generals of both armies in the front to defend. 2) Move units from the unmobilized army to the northern army. 3) When the units in the northern army have mobilized, switch it's general to advance. 4) When the northern front capitulates, move the northern army to the southern front. 5) When the Northern army arrives, switch both armies to advance. You can cancel both artillery import and small arms export. You have 3 lancers, witch eat 6 small arms but have 5 points better offence and defence than cannon artillery. You have one small arms factory, witch provides 30 small arms. So you can provide for 24 line infantry or cuirassiers. Cuirassiers have equal offence to the cannon artillery and 5 point better defence. Line infantry is easier to get by upgrading irregular infantry, witch you have and get from the conquerred states. Bonus) If you prefer cuirassiers, make a new army and recruit them in the start, and move them to the southern front army before you put it on advance. After the wars, you might also want to move all the cavarly to one army, use that as offensive army and have the other one as infantry only, defensive army. I'm not sure if it's enough, but it probably helps to keep your prestige up and you can boost it futher by increasing the military wages.
Coffe is a luxury good that share the same consumption of Wine and Tea. Almost every country in the world have excess production of one of those 3 making it very hard to sell coffe early game. With luck a country might get addicted to coffe but its rare. If you place a interest in Italy you can sell it to Austria and get quite a bit of countries with interesting exports/imports for Brazil, its the only great power that lack all 3 productions, and you can also later sell to England, with million of people improving their quality of life there will be a demand ever increasing in their huge market. At start you can keep the trade tariff at the middle to earn a little more from the trade but later in the game you want to let the exports flow as you improve everyone life and earn from taxes instead.
