I think the problem with this structure is that no matter how many choices you have people will always want more. You could maybe do enough to make it satisfying (maybe three or four broad paths to winning with two or three divergences each that lead to loss down the line and another two or three actions that get you voted out immediately) but I don't think you'd ever in practice get to a level that felt comprehensive. My idea (going in totally the other direction of light detail but almost infinite options) would be to procedurally generate a cast with some stats and personality traits (which determine their actions and how they react to things). The game would proceed kind of like a brantsteele sim except you would choose what your avatar does (a few "actions" each day) and the outcome would be determined by stats and chance.

"the tribe's castaways have decided to vote you out and their decision is final")
I had this game for the DS and it was soooo much more detailed and fun. You got to create your own character and there was tribe life content that you got to contribute to that'd help dictate who went home during the vote. Definitely worth checking out for any fans :)

I remember all the way back in 2010 when the Wiiviwr reviewed this game on his channel and later on put it in his top 10 worst games of the year. In the challenge where you had to collect 3 idol clues, the game bugged and allowed the computer to collect one of his clues in addition to its own. This resulted in him getting softlocked since the game still requires you to finish the challenge even after you've lost. He ran around aimlessly for 10 minutes before he realized what happened and was forced to restart the game.

The last two you had to play are staples from there, where the person who gets last place in those challenges is eliminated, determining the final two. I have no idea if it’s available anywhere, but back in the day I played a computer survivor game with all of the players from season 1 and 2. They made it almost impossible to win, but followed the sane premise as real show
This video was really fun! Have you thought of doing let's plays of the other Survivor video games? Castaway Island would make sense to do next since it's the most recent, but I also heard the DS game follows the structure of the show really well. There's also the early PC games from the early 2000s which are both on the Internet archive. You may need a patch to get Survivor the Interactive game to work though.
I just played the new one on the PlayStation and it was surprisingly decent. The stats are legit and I even found an idol. The AI are actually sort of intelligent. I even had "Angie" from Phillipines blindside me with her own idol. If you don't win the merge immunity challenge youre automatically eliminated though, so backing up your save beforehand is a must. Still a very drunk experience but at least its getting better.
Im actually there hasn't been more attempts at making a Survivor Videogame. Because having a mode where you can control what happens in terms of Tribe Swaps, challenges, also can create a players on the tribes and watching the drama Is a really fun Idea.
Video games based on movies and TV shows were wild in the 80s, 90s and early 2000s some of them feel like a fever dream with how bad or strange they were.... I mean E.T. the video game almost crashed the video gaming market because of how bad it was...

The way I'd make Survivor is an RPG with high levels of procedural generation. Previous players, custom players, pre-defined player, random players. Have stats, skills, reputations, and relationships. Make it a mix of Baldur's Gate, Civilization, and The Sims.
You might try the DS version, it's a bit closer to simulating the game properly, the only problem is that you can easily win if you collect supplies and bathe each day
