Hi!!! Pastry chef here! I know the bread was an unintended mistake but If you ever need to bake your bread first thing in the morning, you can put it in the fridge for the proof. Sounds crazy. It will grow, just slower and actually develops better flavor. It’s called retarding the dough!! I make mine at night and proof overnight, bake in the morning. Jsut let it get back ti room temp when you pull it before baking

A few tips I’ve learned:
When you’re making your dough, put the sourdough starter in the bowl, then put the warm water and mix it so the starter somewhat dissolved in the water. Then mix up the dough and let rest for 1 hour. Then for stretch and folds or coil folds, do them in your bowl without putting flour on the dough. 4 folds for 30 mins x 4 (2 hours) putting flour over it will dry it out.

Love watching your channel. I've been making sourdough for a few years now and that sourdough recipe seems like a doozy!! Give this one a go if you like... my tried and true.
Makes1 Loaf - recipe is easily multiplied
100g active bubbly starter
350g warm water
500g bakers/bread flour
10g salt
Mix water and starter together until a milky consistency, its fine to have a few lumps
Add flour and water and mix together until well combined.
Cover with towel and let sit for 1 hour.
Complete 4 stretch and folds 30 minutes apart covering with towel in between.
Let sit covered for 8-12 hours - until you see bubbles on the surface and its nice and jiggly.
Turn out, then shape into banneton basket, cover and put in the fridge overnight.
Bake in a preheated dutch oven at 500f for 30 mins with lid on, then remove lid turn temp down to 450f and bake for further 15 mins.
Goodluck... I'm addicted to it!

Chicken parmas are an Australian staple, you will see them on the menu at almost every restaurant/pub and most mums make them I feel like,
SO, the easiest way is to get yoself a pre made chicken schnitzel, when the chicken shnitz is cooked get some tomato paste, whack it on top, then some of your fav cheese and sprinkle that shit on top of the tomato paste (i add a bit of garlic powder over my tomato paste to give it a bit of somethin) and pop under the grill or in an oven for the paste to get warm and cheese to melt,
wallah, chefs kiss ( I hope Parma’s are the same down here otherwise awkward)

I’ve been making sourdough for a while now and it’s still finicky sometimes. Air temperature, humidity, the literal microbes in the air all contribute to how it ferments. But it sure feels good when you nail it! Keep it up 🤞🏼🫶🏻
