A dish celebrating aubergines that's delicious and really worth making!
Ingredients
3 large aubergines
1 medium onion - finely chopped/diced
2 tbsp tomato puree
1 tin chopped tomatoes
500 g lean beef mince
1/2 tsp Greek oregano
1/2 tsp ground cinnamon
1/4 ground all spice
3 bay leaves
3 cloves garlic - finely sliced
Bechamel Sauce
50 g all purpose/ plain flour
120 butter
370 - 400 ml milk
salt and pepper
nutmeg
50 g extra mature cheddar

This is a big hit in our family. Yiayia's recipe is almost exactly the same as yours. The only difference is that our kids never liked aubergines so Yiayia scraped out the roasted aubergine and added it to the mince mixture. The kids never really caught on to her trick!
