Classic Homemade Coffee Cake Recipe

- This delicious easy-to-make classic homemade coffee cake recipe is the perfect sweet treat to serve up for breakfast or brunch. I make mine extra thick with extra streusel for the most delicious coffee cake ever.
Coffee cake has been around for generations and is said to have originated in Dresden, Germany. The Danish however was responsible for enhancing the cake to make it sweet and introduced eating it with coffee.
This simple to make cake is one of my favorite things to enjoy with coffee in the morning time as it can balance out the flavors of sweet cake with bitter coffee, much like how you enjoy beignets with chicory coffee.

Ingredients for this recipe:
For the Filling Layer:
• 1 cup packed light brown sugar
• ½ cup all-purpose flour
• 2 teaspoons ground cinnamon
For the Streusel:
• 1 stick of unsalted butter
• 3/4 cup all-purpose flour
• 1 1/2 cups packed light brown sugar
• 2 teaspoons ground cinnamon
• ¼ teaspoon sea salt
For the Cake Batter:
• 2 sticks unsalted butter
• 1 1/4 cups sugar
• 1 tablespoon vanilla
• 5 large eggs
• 3 ½ cups all-purpose flour
• 2 teaspoons baking powder
• 1 teaspoon salt

My German mother made a similar coffee cake..except she added a small amount of fresh grated nutmeg and used vanilla sugar instead of liquid vanilla. It is my favorite coffee cake..so fresh and light.

Hi chef. I have to make 90 pieces for an event. Would trippling the ingredients work? If not can you please tell me the measurements?
I have found neutral oil (veg, canola, grape seed, avocado oils) gives a far better crumb texture than butter (far less expensive too) plus can be eaten straight away from the fridge - butter turns fridge cold cake solid. The lemon zest and juice added in this recipe, does provide an additional flavour punch to compensate for the omission of the butter. Adding a cap of vinegar to the milk and letting it stand for 10 minutes will produce a lovely product similar to buttermilk - further flavour enhancing!

Is there a way to make this coffee cake safe a diabetic? I'm struggling with finding really good delicious recipes as a type 2 diabetic.
Every recipe he makes that adds sugar of any kind, you can substitute granulated white or brown stevia 1-1 ratio. And if you wish to go a step further, use almond flour instead of regular flour. I did this with his cranberry sauce and it was a hit! Get Great Value Stevia at Walmart: it's cheap! (I went full Keto 2 years ago when I was diagnosed with T2. Tons of great recipes online and my A1c is normal now. Lost 45 pounds, too!).
