I love shortbread cookies! I think my recipe is very similar to this one, but cut in half. However, my recipe calls for the dough to be pressed into a baking pan and cut into squares as soon as it comes out of the oven. Delicious!
If you have unsalted butter, can you use that and add salt? How much?

My shortbread recipe that i use ( my moms recipe) has cornstarch in it, and yet most of the recipes i see do not have that in. I wonder why the difference.

Irish shortbread has cornstarch, scottish/english does not.
