  • John from www.growingyourgreens.com/ shows you how he harvests and propagates Yacon, a edible tuber from the Andes you can eat raw. In this episode John harvests yacon and weighs the yield out of a 5 gallon nursery pot. In addition you will learn how to identify the yacon crown and how it can be divided into more plants. Finally you will learn what the yacon tastes like when John does a taste test.

    My husband and I watched your video together. He was impressed by the information and presentation - you get a well deserved thumbs up from hubby! I am subscribed and always love your videos! I want to grow Yacons. Right now we have absolutely no room - we're in an apt with no balcony and the heat is high in winter and summer.

    Aloha: I just harvested a plant I have been growing for two years here in Kihei, Maui, I did get about 10 really big tubers and a wonderful head to replant in the same pot (25 gal). Take care of yourself and hope to see you again here on Maui giving one of your great lectures.

    when storing the crown it is a good idea to leave some of the smaller tubers to provide nutrition to the plant

Hard to believe that the tubers i got last year survived very rough winter. They're gigantic now! I don't know how long should i wait until the harvest? Until the foliage turns brown?     Since they do not keep, John, how much time between first harvested plants and last? Start them a month apart, maybe?

      Mine kept. Got fruit still here in may from last year. Stored in a bag.

    This was a very interesting episode! How would one find a start of the Yacon? I live in Ohio and would like to try to grow them. They sound like an excellent garden plant to sustain my plant-based diet.

    You are mistaken when you say that you have to eat the yacon right away. It actually gets sweeter when you store it in a cool root celler and will continue sweetening for up to a month. I will check on a person who grows fields of the stuff for market and let you know how long they can be stored.

      if stored properly they can store up to 9 months in good condition

      We let our first crop sit out in the sun for a week then they lasted at least another two weeks while we ate them. They got sweeter the longer they sat.
      I think they could last much longeras well.

      Mine are always a bit bitter. Is that from eating the skin? I dont often peel my food.

      Regular works. They like water. Too much can crack the tubers though. But it takes a lot.

    I was able to find some in Berkeley. But you should be able to ship these packed in dirt.

      Fire ant quarantine prohibits mailing soil to/from certain states. Adds weight anyway. Sturdy box lined w aluminum foil shouldnt get too hot. Newspaper padding.

    thats definitely a Yacon, though Yucca roots do look almost identical

    While the Jicama root is great do be careful as to where you plant it. The root is edible but the beans it produces above ground are poisonous. If you have pets that may get at the plant be very, very careful where you plant it.

    Informative session. My only suggestion is to desist the temptation to say GUYS. His overuse is an annoying distraction.
