    About Master Sushi Chef Hiroyuki Terada:
    Master Sushi Chef Hiroyuki Terada is one of the top Japanese Chefs in the entire world and the most popular Japanese chef on UA-cam.
    At age 10, Terada learned the basics of sushi from his father and then went on to attend RKC Chef's School in Kochi, Japan from 1987-1989. He soon earned a nickname for his fast knife, attention to detail, divine presentation and ability to create new dishes and accents based on traditional Japanese cuisine. After graduating RKC Chef School, he was called to serve under Master Chef Kondo at Yuzuan restaurant in Kochi, Japan from 1989-1992. Mr. Kondo is the master of Kansai style cooking, considered to be the high-end of Japanese cuisine. Terada earned the title Master Sushi Chef by becoming the standing head sushi chef & can serve Fugu (Japan Licensed) to the public.

      J H you need to stop wasting your time and helping make our days. This animal would be dead in the wild anyway in a more vicious and inhumane way. Its nature. Me watching this or not doesn’t change what will happen with Hiro and his animal killings, trust me. That crab was going to die eventually just like humans. When humans get mauled by bears, sharks or other animals, that is tragic yes, but life nonetheless.

    Thanks, Hiro. This dish works amazingly well with rich cake(年糕 or 餅). Sometimes people also add water and starch to make soy source base thick and gravy.

      Crab blood isn't red. That pool of clear-brownish stuff is it's blood.
      What you are seeing is the back of it's eye stalk. Basically, he hit the brain and the muscles keeping his eye stalk withdrawn went limp.

    Cantonese style we don't cut the crab down center. We actually leave the big shell intact so people can add rice into the shell after cooked to eat the inside. But nice vid. I can smell the ginger and garlic. Classic Cantonese dish.

    Good afternoon, I am Hong Kong people (100% of hk ppl speak in cantonese) and we never cut like this. And soaking into hot oil is just a method to cook faster but not better taste, the best method to cook is to direct stir fly. We also use chili directly instead of sauce, ginger will cut in chips but not in slice, also, not neccary to use honey and sesemi oil as well as sol sauce. But all in all, non traditional method doesnt mean not good, this dish is absolutely decious.

    Tried this dish tonight with medium size shrimp over rice and asparagus and it is delicious. The ginger and the home made sambal ( ketchup hot sauce garlic and water) made the dish spicy so next time I’ll use less ginger and hot sauce but also make more sauce because the breading soaks up all of the sauce😬Thanks Hiro

    Hiro has some tough, strong hands to tear those legs off like he’s doing.
    I didn’t know you could get so many cuts off of a clove of garlic! Wow, wish I could cut like that.
    Everything that Hiro makes looks so good, I’m going to try some of his recipes.
    He’s also motivated me to work on my knife skills.

    Damn.. I understand that in order to eat them we must kill them, and that goes for any animal we eat. Hell, I eat more meat and seafood than vegies, and Ive killed tens of lobsters and crabs, but this one seemed to show real pain when he was dispatching it. You can see its whincing in pain as the pressure from the knife gets harder...

    I've watched dozens and dozens and dozens of Hiro videos. I am a pescatarian (fish, fruits, and vegetables, with the occasional cheese ;D but no other dairy really). And I disliked seeing this seafood creature gutted. I may become just a vegetarian, but I do love my cod and tilappia, so I'll prob stay pescatarian! One of the things I love most from Hiro's vids is his CLEANLINESS in the kitchen. I value cleanliness and intelligence greatly! Love life to the fullest!

      From what i've seen, crabs have barely any meat in them. And it takes alot of effort to pick whatever there is. I'd just stick to fish and shrimps/lobsters, way more meat and no hassle to get to it.
