- Professional chef Saul Montiel and home cook Daniel are swapping materials and hoping for the best! We set Daniel up with a treasure chest of ingredients from chef Saul’s kitchen, along with a recipe for his eye-popping $149 eggs Benedict. Fortunately, food scientist Rose dialed in for a tutorial teleconference and pep talk to help Daniel navigate. Meanwhile, over in chef Saul’s kitchen, a much more modest $9 worth of ingredients were being finessed by the executive chef in a quest to improvise his way up to gourmet. I really appreciate that the only ingredients he added were still very accessible. He did change it up, but he still used everything in the box, didn't look down on any of it, and still did something creative to elevate and put a personal touch on it.
I think he's operating well within his (admittedly large) knowledge base on this one. What he did made sense.
Gorditas... Totally sensible if you have mediocre store bought muffins that you don't want to use and you have the ingredients on hand.
Breadcrumbs for frying... One of many ways to use muffins that you don't want.
Crispy cheese wafer... Totally normal from watching Saul on this show.
Avocado Hollandaise... Well, the avocado's not going to break the emulsion so why not? He has an avacado that he has to use.

Can we spare a moment to appreciate that Saul, first off doesn't usually add extra ingredients, but second, when he does it's always things that are usually inexpensive that you can often either make yourself or find easily in most grocery stores. It really keeps the actual purpose of the challenge alive while also allowing him to follow his instincts and not be completely constrained. He is genuinely an incredibly impressive chef

Some of the other chefs seem to do stuff to be impressive, but I get the feeling that Saul just does what he likes. I appreciate that.
It's ironic that people diss Daniel when he is in The 4 Levels, but love him when he is in Pro Chef vs Home Cook. I honestly love him in both series. As for Saul, visiting his cantina is in my bucket list.

For all those that don't know, a lesson- NYC water doesn't come from the Hudson. It mostly comes from a series of reservoirs in the Catskill (Mountains) and Delaware (River) watershed, 2-3 hours north of the city, with 10% coming from reservoirs in the Croton (Westchester county) watershed. In the early 1910s/1920s, the city moved many towns (though some would simply cease to exist) and even cemeteries to create the water system. It was one of the biggest engineering projects of its time and the pictures of its creation are unimaginable in scale, especially if you know the area.

I’m in love with Chef Saul! He has such a lovely wit about him. Great sense of humor. And it’s been established that Daniel is a cool dude. He says things that would make me cringe if anyone else said it, but he uses trite phrases with such charm that I can’t be upset. He’s a human personification of a golden retriever.
