I'm Vietnamese. The way that girl cooked Pho is fine to me. But my dad is Pho chef. So, if you wonder, I can show you what can she change to make original Pho (I mean Hanoi Pho). 1.Never oil and roast beef bones. It makes the broth dark and fatty. Instead, she can boil those bones in 5 minutes, then wash them clean and start to slow cooking it again. When the water start to boil, there maybe a little scum appears on surface, so she has to skim it. This step is very important. It make broth lessen iron smell(like blood smell). Until it clean, she has to cover up the pot, turn low heat and wait for 4 hours (at least). 2. Cinamon, star anise and onion were roasted. That's good. But she shouldn't drop it in broth like that. Instead, she should wrap it inside a piece of fabric. It will keep broth clean and not bitter. After cooking process, she can easily take that wrapper out. 3. The meat be cooked in broth. Well, that good. But I prefer half cooked meat, half uncooked meat. Just need to dip sliced raw meat in broth for maximum 20 sec, you will have perfect medium rare beef.

To be fair veggie broth need a lot of Veggie. You can’t expect veggie pho with 2 veggie : bok Choy 🥬 and mushrooms 🍄. You need way more veggie for broth and topping. You need more stuff for veggie broth cuz veggie don’t have as much flavor as meat and can’t cook as long. He didn’t even have fish sauce which is a staple in pho. It like expecting him to make vegan spaghetti and meatball with just crush tomatoes as sauce. It is possible but will taste really awful. You can’t expect veggie broth with a few veggie and think it will be good. It need a lot is spice, seasoning, and especially veggies.

As a Northern Vietnamese who lives in Hanoi, even though King's pho is not authentic and different, I love the innovation and the creativity of the recipe. He brought what is best from his ethnicity, Vietnamese, and other Asian ingredients to make a really delicious fusion dish. What to try it one day.

Actually i think wagyu is better at medium or even medium-well; the longer cook time allows much more of the fat to render :) You gotta try that sometime with a little piece if you‘re afraid of ruining your wagyu!
I mean, to be fair...I said the same thing...but, again, to be fair...that cut was so thin because people try to milk every penny, that you couldn't put a crust on that without overcooking it. For the people in the comments who might be avid meat lovers, I really really recommend going to a temple or vegetarian viet restaurant to try a good and accurate take on meatless pho. Vietnamese cuisine is very flexible and I can always access a vegan version of pho which uses dried mushrooms and spice. The flavours are never far off, and they usually use soy-based fake meats for toppings. This is because of how essential our dishes are to vegetarians and Buddhist temples. Honestly, I bloody love the vego versions, they feel lighter than the original (since they lack the fat from meat).
@@crowmaster9652 i'm talking about wagyu, not just average beef? In my experience, wagyu is tender, juicy, and flavourful, whether it's rare, medium rare, medium, or medium well. In fact medium well was the juiciest due to the high fat content, i can't speak for well done, but the steak she cooked looked med-well. It's certainly way more flavourful and juicy than anything you're cooking (and myself). So maybe try things before making assumptions? I've personally never eaten well done meat by choice, but i've most certainly enjoyed well done pieces of meat that were incredibly tender. Maybe try and find some better beef if yours comes out like flakey chicken :)

Actually i think wagyu is better at medium or even medium-well; the longer cook time allows much more of the fat to render :) You gotta try that sometime with a little piece if you‘re afraid of ruining your wagyu!

I mean, to be fair...I said the same thing...but, again, to be fair...that cut was so thin because people try to milk every penny, that you couldn't put a crust on that without overcooking it. You'd have to make it blue rare, which is fine, but who wouldn't prefer a 1.5-2 inch cut that you could truly sear?
I love how all these pro chefs just look at the meagre ingredients, take it in stride with a smile and make something awesome. I wish I had that skill.

@@Vikingwerk Yes, like shabu-shabu or "hot pot." The name shabu-shabu refers to the beef cooking time, literally "swish-swish" in the hot water and it's done.

For the people in the comments who might be avid meat lovers, I really really recommend going to a temple or vegetarian viet restaurant to try a good and accurate take on meatless pho.
Vietnamese cuisine is very flexible and I can always access a vegan version of pho which uses dried mushrooms and spice. The flavours are never far off, and they usually use soy-based fake meats for toppings. This is because of how essential our dishes are to vegetarians and Buddhist temples.
Honestly, I bloody love the vego versions, they feel lighter than the original (since they lack the fat from meat).
(Some temples I know sell takeaway to the public for extra income and to spread awareness)

@@crowmaster9652 i'm talking about wagyu, not just average beef? In my experience, wagyu is tender, juicy, and flavourful, whether it's rare, medium rare, medium, or medium well. In fact medium well was the juiciest due to the high fat content, i can't speak for well done, but the steak she cooked looked med-well. It's certainly way more flavourful and juicy than anything you're cooking (and myself).
So maybe try things before making assumptions?
I've personally never eaten well done meat by choice, but i've most certainly enjoyed well done pieces of meat that were incredibly tender. Maybe try and find some better beef if yours comes out like flakey chicken :)

I agree. The chef half really got shafted this time around. I know pho is all about the noodle... But it is generally mainly associated with beef. They could have at least given him cheap cuts of beef and some bones

@@redace4821 This ☝🏻. The essence of pho os the stock, not the beef slice that's on the final bowl. There's a reason why many spent 6 or even 12 hours to simmer the broth while the beef in most recipe are sliced when it's still raw and unseasoned
