It will not burst if one follows these two tips.1) as one makes the tiny balls of the wet dough, spread on a clean cloth to help remove excess moisture 2) keep oil in a flatter smaller kadai to a depth of only say about 3to 4 cm that is less than two inches, and dump the wet balls to a heap so that part of the heap is above the oil. This is very important, so that whatever moisture vapour escapes, escapes in the air directly. And it is not smothered by the hot oil, which helps the pressure release by explosion..

Fantastic recipe. I have heard that for not bursting, we should not press too much and make balls. Roughly make balls then there will be airspace inside each seedai no bursting. Some people add coconut grated, sesame seeds which creates some gap inside each seedai so no bursting. My personal experiece no bursting. Only 2nd time i did once it bursts. Lack of air space is the only reason for bursting
